This is the kind of dish that brings everyone to the table happily, from kids to grandparents. The pan fried potatoes bring crunch, the bacon adds flavor with no extra work, and the eggs tie it all into one soft, satisfying bite. A little fresh parsley on top and you're done, no fuss involved.
Mon Chou turns to this one on busy weeknights when the fridge is nearly empty but you still want something hot and filling. It also works well for a relaxed Sunday evening, served as one big omelette in the middle of the table so everyone can help themselves.

The step by step recipe
-
Peel the potatoes, cut them into small dice, and fry them in the oil until browned. 15 min
Cover the pan for the first five minutes so they cook through.
-
Add the bacon and sliced onion, and brown them together with the potatoes. 6 min
Don't add salt at this stage, the bacon is already salty.
-
Beat the eggs with the parsley and a little salt and pepper.
Beat just enough to combine, overbeaten eggs turn rubbery.
-
Pour the eggs over the filling and cook on low heat, pulling the edges toward the center. 8 min
Cover for a few minutes, the top sets without needing to flip.
-
Fold the omelette or cut it into portions, and serve with the dressed salad.
An omelette that's soft in the center is much better.
Our tips to get it right
- Use a wide nonstick skillet, it makes it much easier for the omelette to cook evenly and slide out cleanly.
- Cut the potatoes into even, small dice so they cook through quickly and brown at the same rate.
- Let the omelette rest off the heat for a minute before slicing, it holds together better and won't fall apart.
The variations
- Swap the smoked bacon for plain bacon lardons or regular bacon, the flavor will be a touch milder but still good.
- For a vegetarian version, skip the bacon and add sauteed mushrooms or bell peppers instead.
- For rushed kids, cut the potatoes smaller so they cook faster and the omelette hits the table sooner.
What to serve it with
- Green salad with vinaigrette
- Fresh country bread
- Sparkling water with lemon
Storage
The omelette keeps for 2 days in the fridge in a sealed container. It doesn't freeze well since the eggs change texture. Reheat it gently in a skillet or for a few seconds in the microwave, it's also good served cold or warm for a picnic.
Questions about this dish
Can you prep the potatoes ahead of time?
Yes, you can dice and cook them a few hours in advance, then let them cool. They actually brown better once cooled, which saves time when you're ready to serve.
How do you keep the omelette from sticking to the pan?
Use a nonstick skillet and don't skimp on oil when cooking the potatoes. Keeping the heat low once the eggs go in also helps prevent sticking.
Can you replace the eggs with something else to bind the filling?
Eggs are the key ingredient that hold the whole filling together, there's no real substitute that gives the same result. That's what creates the soft texture in this omelette.
Do you need to flip the omelette while it cooks?
No, that's not necessary. Covering the pan for a few minutes lets the top set without flipping, and the center stays nice and soft.
How long does it take to make a country omelette with bacon, potatoes, and a green salad?
