Whole trout roasted in the oven turns tender under skin that crisps up thanks to the smoked bacon wrapped around it. The lemon and thyme tucked inside flavor the flesh without overpowering it, and the juices that collect in the dish while it cooks become a small natural sauce for the potatoes.

This is a dish that saves a weeknight because it takes so few steps, but it also earns its place at a Sunday family table. Whole trout wins over kids once the flesh is lifted off the bone, and the smoked bacon brings a familiar flavor that reassures less adventurous eaters.

The step by step recipe

  1. Preheat the oven to 200°C. Rinse the trout, pat them dry, season the inside with salt and pepper, and tuck in some thyme and a lemon slice.

Ask your fishmonger to gut the trout for you.

  2. Wrap two slices of bacon around each trout and place them in a baking dish.

Tuck the end of the slice underneath the fish so it doesn't unroll.

  3. Roast the trout until the bacon is crisp. 25 min

Check near the backbone, the flesh should flake easily.

  4. Meanwhile, peel the potatoes and steam them. 25 min

Salt the steaming water, the potatoes will taste better.

  5. Serve the trout with the buttered potatoes, sprinkled with parsley.

Spoon the pan juices over the potatoes.

Our tips to get it right

  • Pick trout of similar size so they all cook at the same rate in the oven.
  • Keep the bacon slices pressed flat against the fish skin, they crisp up better with direct contact.
  • Taste a potato before serving, it should give easily under a knife tip without turning mushy.

The variations

  • Swap the smoked bacon for thin slices of prosciutto for a milder, less fatty flavor.
  • For a meat free version, wrap portobello mushroom slices in bacon and roast them for the same time.
  • To save time, ask your fishmonger to prep the trout and cut the potatoes into chunks to shorten the steaming time to about 15 minutes.

What to serve it with

  • A green salad with lemon
  • A splash of cider vinegar on the fish
  • Sparkling water with lemon

Storage

Cooked trout keeps for 1 day in the fridge in a sealed container, the fish loses texture quickly beyond that. Reheat gently in a 150°C oven so it doesn't dry out. Steamed potatoes don't freeze well, so it's best to prepare them just before serving.

Questions about this dish

How do you know the trout is cooked without drying it out?

Gently part the flesh near the backbone with a fork, it should flake easily and look opaque, not translucent. Allow about 25 minutes at 200°C for medium sized trout.

Can you prep the trout ahead of time?

You can stuff and wrap the trout in bacon a few hours ahead, then keep them covered in the fridge until you're ready to roast. Take them out 15 minutes before cooking so they cook more evenly.

What fish can replace trout if I can't find any?

A small whole sea bass or bream works well with this bacon wrapped method. Just adjust the cooking time to the size of the fish.

Do kids usually eat this easily?

Yes, the smoked bacon gives a mild, familiar flavor that kids often enjoy, and the steamed potatoes reassure picky eaters. You'll just want to help them remove the bones before serving.
