Warm potato salad with goat cheese and walnuts

Warm potato salad with goat cheese and walnuts is a complete dish for 4 people, ready in 35 minutes and very easy to make, for about €2.20 per serving. The trick is to pour the mustard and vinegar dressing over the potatoes while they're still hot, so they soak it up before meeting the fresh goat cheese and toasted walnuts.

Tonight, a big warm potato salad, with fresh goat cheese, walnuts and lamb's lettuce, plus bread to finish the plate.

This salad is a nice change from cold salads, with soft potato rounds, fresh goat cheese that melts a little on top, toasted walnuts that add crunch, and lamb's lettuce for freshness. The mustard and shallot dressing ties everything together without hiding the taste of the potatoes.

It's a good choice for a weeknight when you want something simple but still full of flavor, or for a spring or summer lunch served outside. Kids can eat it without the goat cheese if they're not fans yet, and toasted country bread on the side rounds out the plate.

The step by step recipe

  1. Cook the potatoes in their skins in salted water, then peel them and slice them into rounds. 25 min

Leave the skin on while cooking, that way the potatoes don't soak up extra water.

  2. Make the dressing with the mustard, vinegar, oil, chopped shallot, salt and pepper.

Whisk it with a fork, the mustard binds everything together.

  3. Toss the warm potatoes with half of the dressing.

Toss gently to keep the rounds intact.

  4. Toast the walnuts in a dry skillet and crush them. 3 min

Watch them closely, they burn within seconds.

  5. Arrange the lamb's lettuce on plates, add the potatoes, crumbled goat cheese and walnuts, then drizzle with the rest of the dressing.

Serve right away, lamb's lettuce doesn't hold up well if it waits.

Our tips to get it right

  • Pick a waxy potato like Yukon Gold or fingerling, they hold their shape in rounds without falling apart in the salad.
  • Slice the potatoes while they're still warm, they cut more cleanly and soak up more of the dressing.
  • Crumble the goat cheese by hand rather than slicing it, the uneven pieces catch the dressing and lamb's lettuce better.

The variations

  • Swap the fresh goat cheese for a semi-aged goat cheese cut into slices, for a stronger flavor.
  • Swap the walnuts for toasted hazelnuts or almonds if that's what you have on hand.
  • For a faster version, skip whisking the dressing and just drizzle olive oil, vinegar and a bit of mustard straight over the salad.

What to serve it with

  • Toasted country bread
  • A glass of dry white wine
  • A chilled soup starter

Storage

This salad keeps for 1 day in the fridge in a sealed container, but the lamb's lettuce wilts fast. It doesn't freeze well. The next day, eat it cold or just warm the potatoes and rebuild the plate with fresh lamb's lettuce.

Questions about this dish

Can you make this salad ahead of time?

You can cook the potatoes and make the dressing several hours ahead. Assemble the salad with the lamb's lettuce and goat cheese right before serving.

Can you use a different cheese instead of fresh goat cheese?

Yes, crumbled feta or sliced semi-aged goat cheese both work well. Pick a cheese that holds its shape a bit so it doesn't melt completely into the warm salad.

How do you keep the lamb's lettuce from wilting too fast?

Add the lamb's lettuce only right before serving, never earlier. The warmth from the potatoes will soften it slightly, which is exactly what you want.

Is this salad good for kids who don't like goat cheese?

Yes, just serve them a plate without the goat cheese, with the potatoes, lamb's lettuce and walnuts. Add a little extra dressing to make up for it.
