Under a crisp breadcrumb crust, these patties hide a soft mashed potato filling mixed with flaked tuna, onion, and parsley. The contrast between the crunchy outside and the tender center is what makes this simple dish so satisfying, with no bones and no complicated technique.

This is the kind of recipe that saves a busy weeknight, made with ingredients you almost always have on hand. Kids like the texture, close to a fish stick, and a green salad on the side turns it into a complete meal without any extra effort.

The step by step recipe

  1. Cook the peeled potatoes in salted water and mash them. 20 min

Dry out the mash for a few minutes over low heat.

  2. Mix the cooled mash with the drained, flaked tuna, chopped onion, parsley, one egg, salt, and pepper.

Add a bit of breadcrumbs if the mixture is too soft.

  3. Shape eight patties with wet hands, then coat them in beaten egg and breadcrumbs.

Wet your hands so the mixture doesn't stick.

  4. Fry the patties in oil in a skillet over medium heat until golden. 10 min

Flip them only once, using a wide spatula.

  5. Drain them on paper towels and serve with the dressed salad.

A squeeze of lemon over the patties works well.

Our tips to get it right

  • Drain the tuna well and press it lightly in a strainer, otherwise the mixture gets too wet and the patties fall apart while cooking.
  • Cook the patties over medium heat rather than high, so the breadcrumbs turn golden without burning before the center is warm through.
  • Shape the patties to an even thickness, about two centimeters, so they cook evenly all the way through.

The variations

  • Swap the tuna for cooked flaked salmon for a softer, milder version.
  • For a vegetarian version, replace the tuna with mashed chickpeas and a pinch of cumin.
  • To save time, shape four large patties instead of eight, they just need a bit longer in the pan.

What to serve it with

  • Green salad with vinaigrette
  • Lemon wedges
  • Homemade tartar sauce

Storage

Cooked patties keep for 2 days in the refrigerator in a sealed container. You can freeze them raw and breaded on a tray before transferring them to a bag. Reheat thawed patties in a skillet over low heat so they stay crisp.
