Niçoise trouchia with tomato salad

Trouchia is a thick Niçoise omelet made with Swiss chard and parmesan, served warm with a tomato salad. For 4 people, it takes 35 minutes, is easy to make, and costs €2.20 per person. The key to success is cooking it low and slow with the lid on so it stays soft in the center.

Trouchia is the thick omelet from Nice, the kind that holds its shape once sliced into wedges. The wilted Swiss chard adds softness and a mild sweetness, while the parmesan brings character without overpowering the vegetables. Served warm, it has a dense, satisfying texture that sets it apart from a regular omelet.

This is a great choice for a weeknight when you want something simple that still tastes good. Kids who already like omelets tend to enjoy it, and the tomato salad adds the fresh contrast the dish needs. We like to make it in spring and summer, when tomatoes are at their best.

The step by step recipe

  1. Chop the Swiss chard and onion, then cook them in the oil until tender. 12 min

Salt at the end, they release less water that way.

  2. Beat the eggs with the parmesan, parsley, and pepper.

The cheese already adds salt, taste before seasoning.

  3. Mix the cooled chard into the eggs.

Let the vegetables cool a bit so they don't cook the eggs.

  4. Pour into an oiled pan, cover, and cook over low heat, flipping halfway through. 15 min

Use a plate to flip the omelet without breaking it.

  5. Slice the tomatoes, season with oil and basil, and serve alongside the trouchia in wedges.

Salt the tomatoes at the last moment.

Our tips to get it right

  • Drain the chard well after cooking, too much water will keep the trouchia from holding together.
  • Use a nonstick pan of the right size, the trouchia should end up at least 2 centimeters thick.
  • Let the trouchia rest a few minutes off the heat before slicing, it cuts more cleanly that way.

The variations

  • Swap the Swiss chard for spinach, it cooks faster since it releases less water.
  • Add some browned bacon bits to the chard for a richer version, on days when meat is on the menu.
  • For kids in a hurry, cut the trouchia into small squares to eat with fingers, skip the salad.

What to serve it with

  • Crusty bread to mop up juices
  • A glass of chilled rosé
  • A few Niçoise olives to start

Storage

Trouchia keeps for 2 to 3 days in the fridge in a closed container. It also tastes good cold, great for picnics or cut into cubes for appetizers. Reheat gently in a pan or just eat it warm, it doesn't freeze well because of the eggs.

Questions about this dish

Can you make trouchia ahead of time?

Yes, it's actually recommended, it tastes better warm or cold than piping hot. Make it a few hours ahead and leave it at room temperature until serving.

How do you flip the trouchia without breaking it?

Place a large plate over the pan, flip firmly, then slide the trouchia back into the pan. A well oiled pan also makes this easier.

Can you swap out the parmesan?

Yes, another hard cheese like grated Gruyère works well. Avoid very soft cheeses, they would make the mixture too wet.

Do you need to peel the Swiss chard?

Just remove the strings from the white ribs if they're thick, the green leaves don't need peeling. Wash the leaves well, they often hold onto dirt.
