Marinated in lemon and dill, the salmon picks up a bright, tangy flavor before it ever hits the pan. Threaded onto skewers and grilled in cubes, it stays tender inside while the outside turns lightly golden. The cherry tomatoes skewered alongside the fish soften gently as they cook, adding a sweet note that balances the lemon.

This is a seasonal dish, great for spring or summer, and it works well with kids thanks to its simple texture and mild flavor. The bulgur with cucumber and mint brings freshness and lightness, perfect for a quick weeknight dinner or a relaxed meal with guests.

The step by step recipe

  1. Cut the salmon into 3 cm cubes and marinate with the juice of one lemon, the olive oil, dill, salt and pepper. 20 min

Don't marinate for more than twenty minutes, the acidity would start to cook the fish.

  2. Cook the bulgur according to the package in twice its volume of salted water, then fluff it with a fork. 10 min

Cover it off the heat for five minutes, it will finish plumping up.

  3. Cut the second lemon into wedges, then thread salmon, lemon, and cherry tomatoes onto the skewers.

Leave a little space between the cubes so they cook evenly.

  4. Grill the skewers in a very hot pan or under the broiler, turning them as they cook. 8 min

Only move them to flip, the salmon will flake apart otherwise.

  5. Mix the bulgur with the diced cucumber, chopped mint, and a drizzle of olive oil, then serve with the skewers.

Add the mint at the last minute so it keeps its fragrance.

Our tips to get it right

  • Pick a fresh salmon fillet with no bones, it will be much easier to cut into even cubes.
  • Soak wooden skewers in water for fifteen minutes before threading them so they don't scorch on the grill.
  • Serve the skewers right off the heat, the salmon keeps cooking slightly and loses its tenderness if it sits too long.

The variations

  • Swap the salmon for cod or monkfish for a milder tasting version.
  • For a vegetarian version, thread cubes of halloumi or firm tofu instead of fish, the marinade works just as well.
  • For kids in a hurry, skip the skewers and simply pan sear the salmon in chunks, served with the same bulgur on the side.

What to serve it with

  • A dollop of lemony yogurt
  • A simple arugula salad
  • Sparkling water with lemon

Storage

Keep the skewers and bulgur separately in the fridge in a sealed container for up to 2 days. Gently reheat the salmon in a pan or eat it cold in a salad, the bulgur is good warm or cold. Freezing isn't recommended, cooked salmon loses its texture.

Questions about this dish

Can you make the marinade ahead of time?

You can mix the marinade the day before to save time, but only add the salmon twenty minutes before cooking. Too long in the lemon juice will start to cure the fish like a ceviche.

Can you cook the skewers in the oven instead of a pan?

Yes, broil them for 8 to 10 minutes, flipping halfway through. Watch the color closely so the salmon doesn't dry out.

Can you swap the bulgur for another grain?

Quinoa or basmati rice both work well in place of bulgur, just adjust the cooking time. Keep the cucumber and mint to preserve the dish's freshness.

How do you keep the salmon from falling apart on the skewer?

Cut the cubes evenly, around 3 cm, and only flip them once during cooking. Starting with a very hot pan also helps sear the fish without breaking it up.

How long does it take to make lemon salmon skewers with bulgur?

Count 40 min in total, prep and cooking included. The recipe is rated “easy”.
