This dish plays on contrasts, golden tofu with a bit of crispness on the outside, meaty shiitake mushrooms, broccoli that keeps its crunch, all tied together with a soy sauce that turns glossy thanks to the cornstarch. Ginger and garlic add a kick without covering up the vegetables.

It's an easy weeknight dinner you can fit between errands, good for a light meat-free evening or for serving simple food to vegetarian friends. Mon Chou likes this one for how fast it comes together and how generous it is with vegetables.

The step by step recipe

  1. Cut the tofu into cubes and pat it dry. Cut the broccoli into florets and slice the shiitake mushrooms.

Peel the broccoli stem and slice it, it's delicious.

  2. Cook the rice in a pot of salted water, then drain it. 11 min

Start the rice before the stir-fry, which cooks very fast.

  3. Brown the tofu in a skillet with a tablespoon of oil until golden on all sides, then set it aside. 8 min

A hot nonstick skillet keeps the tofu from sticking.

  4. Drop the broccoli florets into boiling water for 2 minutes, drain, then stir-fry them with the shiitake mushrooms, garlic, and ginger. 5 min

Plunge them into cold water afterward if you want to keep their bright green color.

  5. Pour in the soy sauce, broth, and diluted cornstarch, add the tofu back in, and let it glaze for 2 minutes. Serve with the rice. 2 min

The cornstarch makes the sauce glossy, it thickens in seconds.

Our tips to get it right

  • Use firm tofu and press it well before cutting, it will brown much better and won't release water in the pan.
  • Cut the shiitake mushrooms and broccoli to roughly the same size so everything cooks evenly.
  • Prep all your ingredients before you turn on the heat, the stir-fry cooks fast and you won't have time to chop as you go.

The variations

  • Swap the shiitake mushrooms for button mushrooms if you can't find any, the result is still good even if a bit less flavorful.
  • Add crushed peanuts or toasted sesame seeds at the end for extra crunch.
  • For a faster version, use frozen broccoli florets, they can go straight into boiling water with no prep.

What to serve it with

  • Rice, already included in the recipe
  • Green tea or lemon water
  • A side of stir-fried noodles

Storage

Keep leftovers in the fridge in a sealed container for 2 to 3 days. This dish doesn't freeze well since the broccoli turns mushy, so it's best eaten fresh. Reheat it in a skillet over medium heat so the tofu keeps some bite.

Questions about this dish

Can I use silken tofu instead of firm tofu?

No, silken tofu is too delicate to stir-fry and brown. Stick with firm tofu, well drained and pressed, it's what gives this dish its golden texture.

Do I really need to blanch the broccoli before stir-frying it?

Yes, two minutes in boiling water softens it slightly without making it mushy. It finishes cooking in the pan while keeping its crunch and bright color.

Can I prep this dish ahead of time?

You can chop all the vegetables and tofu a few hours ahead. But cook the stir-fry right before serving so the broccoli stays crisp and the tofu stays golden.

What can I use instead of shiitake mushrooms?

Button mushrooms or cremini mushrooms work well. The flavor will be a bit milder, but the texture of the dish stays the same.
