Roasted broccoli and sesame noodles

Roasted broccoli and sesame noodles is a vegetarian dish for 4 people, ready in 35 minutes, easy to make, for about €2.00 per person. The key is drying the broccoli florets well before oiling them so they roast instead of steaming, plus a tahini soy sauce loosened with hot water.

Tonight we're headed for everyday Asia, with well charred roasted broccoli over noodles coated in sesame sauce.

This dish plays on contrast, the charred crunch of broccoli straight from the oven against soft egg noodles coated in a silky sesame sauce. Tahini brings an almost creamy roundness, soy sauce and rice vinegar balance it with salt and acidity, and fresh ginger wakes everything up without ever taking over.

It's the kind of dinner Mon Chou likes to slot into a busy weeknight, since it comes together in half an hour with minimal cleanup and plenty of flavor. Kids tend to take to it easily if you dial back the soy sauce a bit, and leftover roasted broccoli slides into a lunchbox the next day without losing its appeal.

The step by step recipe

  1. Preheat the oven to 220°C, cut the broccoli into small florets and toss them with oil and a pinch of salt.

Cut the stems into sticks too, they're delicious roasted.

  2. Spread them on a baking sheet and roast until the edges are charred. 20 min

Flip them once halfway through so both sides get color.

  3. Meanwhile, mix the tahini, soy sauce, vinegar, honey, grated garlic and ginger with 3 tablespoons of hot water.

Hot water loosens the tahini and the sauce turns smooth without lumps.

  4. Cook the noodles in boiling water according to the package, drain them and toss them right away with the sauce. 5 min

Save a little cooking water to thin the sauce if it thickens too much.

  5. Arrange the noodles in bowls, top with the roasted broccoli and sprinkle with sesame seeds.

Toast the sesame seeds dry in a pan first, their flavor doubles.

Our tips to get it right

  • Use a baking sheet large enough that the florets aren't crowded, otherwise they'll steam instead of roast.
  • Grate the garlic and ginger very finely so they melt into the sauce without sharp little bits.
  • Toss the noodles with the sauce as soon as they're drained, while still hot, since they soak it up better than when cold.

The variations

  • Swap the broccoli for cauliflower or asparagus depending on the season, the roasting time stays about the same.
  • For a quicker version, use rice noodles, which cook in a few minutes in hot water without a long boil.
  • For kids, cut the soy sauce in half and add a touch more honey, the flavor turns milder.

What to serve it with

  • A drizzle of sriracha for heat
  • Steamed edamame on the side
  • A light green tea

Storage

Roasted broccoli and noodles keep for 2 days in the refrigerator in a sealed container, combined or separate. This dish doesn't freeze well, since broccoli turns soft once thawed. Reheat in a skillet for a few minutes rather than in the microwave, so the broccoli gets some of its crunch back.

Questions about this dish

Can I make the sesame sauce ahead of time?

Yes, you can make it the day before and keep it in the fridge in a sealed jar. Take it out just before using and stir well, since tahini tends to separate a little as it sits.

What noodles can I use instead of Chinese egg noodles?

Udon noodles or regular spaghetti both work well as a substitute. Just adjust the cooking time according to the package instructions.

How do I make this recipe gluten free?

Swap the egg noodles for rice noodles and use a gluten free soy sauce instead of regular. The rest of the recipe stays the same.

Why isn't my broccoli charring properly in the oven?

It's usually because it's still damp or too crowded on the sheet. Dry the florets well before oiling them and leave space between them so they roast instead of steaming.
