Pad see ew plays on the contrast between soft wide rice noodles and their edges, which catch slightly on the wok and turn almost crisp in spots. The sweet soy sauce coats every noodle in a deep brown color and a caramelized flavor, while the beef stays tender thanks to a quick, hot cook. Broccoli adds crunch and a fresh green note that lightens the dish, and the scrambled egg quietly ties everything together.

It's a great weeknight dinner because it comes together in a single pan and needs no simmering. Kids generally like it for its sweet and savory flavor and noodles that are easy to eat. Mon Chou suggests it both for a quick midweek meal and for surprising guests with a dish that breaks from the usual routine.

The step by step recipe

  1. Soak or cook the noodles according to the package, drain them and lightly oil them. 6 min

Separate them by hand, they won't stick.

  2. Slice the beef into thin strips and cut the broccoli into small florets.

Blanch the broccoli for 1 minute in boiling water, it will stay crisp and green.

  3. Mix the soy sauces, oyster sauce and sugar together.

The dark soy sauce gives the color, if you don't have any just add a bit more soy sauce.

  4. Heat the wok, sear the beef with the garlic in half the oil, then set aside. 3 min

Hot and fast, otherwise the beef releases its water.

  5. Crack the eggs into the wok, add the broccoli, noodles, sauce and beef, then stir fry everything together. 5 min

Spread the noodles across the surface of the wok, they color better that way.

Our tips to get it right

  • Use a wok or large pan that's really hot before adding anything, the heat is what gives this dish its signature caramelized flavor.
  • Don't overcrowd the wok, cook in two batches if needed, otherwise the noodles steam instead of browning.
  • Prep every ingredient before you start cooking, once the wok is hot everything moves fast and there's no time to improvise.

The variations

  • Swap the beef for sliced chicken or shrimp for a change, the cooking time stays about the same.
  • For a vegetarian version, replace the beef with firm tofu browned in a pan and swap the oyster sauce for a mushroom based sauce.
  • For kids, cut back slightly on the dark soy sauce and serve the noodles with a little less broccoli, more beef and egg.

What to serve it with

  • Jasmine or green tea
  • A tangy cucumber salad
  • Lime wedges to squeeze on top

Storage

Store leftovers in a sealed container in the fridge for up to 2 days. Freezing isn't ideal since the noodles lose their texture. Reheat in a pan or wok with a bit of oil rather than the microwave, to bring back some of the caramelization.
