Mackerel has a rich, slightly oily flesh that handles the bite of strong mustard really well. In the oven, the skin crisps up a little while the inside stays moist, and a squeeze of lemon at the end lightens everything up. The roasted potatoes next to it soak up the cooking juices and round out the plate on their own.

This is a weeknight dinner that needs few steps and just one baking sheet. It suits an evening when you want fish on the table without spending much time on it, whether for two adults or a family that likes bolder flavors. Mon Chou built this recipe to give a simple, inexpensive fish its due.

The step by step recipe

  1. Peel the potatoes, cut them into rounds and roast them at 210°C with the oil, thyme and salt. 25 min

Flip them halfway through so they brown on both sides.

  2. Brush the mustard over the flesh side of the fillets.

Don't go too thick, just a thin layer so it doesn't mask the fish.

  3. Arrange the fillets skin side down on an oiled baking sheet.

A lightly oiled sheet keeps the fish from sticking.

  4. Slide the sheet into the oven with the potatoes and let it cook. 10 min

Mackerel cooks fast, it's ready when the flesh turns opaque.

  5. Serve with the lemon, chopped parsley and a bit of pepper.

A squeeze of lemon cuts through the richness of the fish.

Our tips to get it right

  • Pick mackerel fillets that are fresh, with shiny skin and no strong smell, they will cook more evenly.
  • Slice the potatoes thin and even so they all roast at the same pace.
  • Pull the fillets out as soon as the flesh turns opaque, one extra minute dries them out fast.

The variations

  • Swap the strong mustard for a grainy mustard for a milder taste and a bit of texture.
  • For a vegetarian version, replace the mackerel fillets with zucchini or eggplant slices brushed with mustard and roasted the same way.
  • For kids, use a mild mustard and serve the fish skinless, flaking the flesh a little.

What to serve it with

  • A tangy green salad
  • A glass of dry white wine
  • Toasted country bread

Storage

Keep leftovers in the fridge in a sealed container for 1 to 2 days, fish doesn't keep as long as meat. Reheat gently in the oven or in a skillet over low heat so the flesh doesn't dry out. Freezing isn't recommended once the dish is cooked.

Questions about this dish

Can you use a different fish instead of mackerel?

Yes, herring or sardines work well in this recipe since they are oily fish that pair nicely with mustard. Just adjust the cooking time to the thickness of the fillets.

Can you prep this dish ahead of time?

You can peel and slice the potatoes a few hours ahead, and brush the fillets with mustard right before baking. The fish tastes best cooked just before serving.

Why score the skin of the fish?

Small cuts let the mustard soak into the flesh and keep the skin from curling as it cooks. The fillet holds its shape better this way.

Which mustard works best for this dish?

A classic strong mustard gives the fish character without being harsh once baked. A grainy mustard also works if you prefer a milder taste with some texture.
