Lamb marinated with garlic, lemon and thyme takes on a bold, herby flavor without being buried under heavy spices. Grilled in a pan or under the broiler, it stays tender and slightly pink in the center, with lightly charred edges. The lemon threaded between the cubes on the skewer adds a bright note that wakes up every bite.

This is a dish to make once the weather turns warm, for a weekend dinner or a meal with friends outside. The paprika potatoes roast in the oven while the lamb marinates, which keeps things simple even on a weeknight. Expect this dish to feel more special than your usual grilled meat, without any extra effort.

The ingredients

4 people

Butcher

  • Lamb shoulder or leg, cubed 800 g

Fruits and vegetables

  • Garlic 3 cloves
  • Thyme 6 sprigs
  • Lemon 1
  • Potatoes 900 g

Pantry

  • Olive oiloften in the pantry 6 tbsp
  • Paprikaoften in the pantry 1 tsp
  • Saltoften in the pantry 1 pinch
  • Pepperoften in the pantry 1 pinch

The step by step recipe

  1. Mix the olive oil, crushed garlic, thyme and lemon juice, then coat the lamb cubes. 20 min

Let it marinate in the fridge.

  2. Cut the potatoes into wedges and toss them with olive oil, paprika, salt and pepper.

Dry them well before adding the oil, they brown better that way.

  3. Roast the potatoes at 220°C. 35 min

    Flip them halfway through cooking.

  4. Thread the lamb onto skewers, alternating with pieces of lemon.

Soak wooden skewers in water beforehand so they don't burn.

  5. Grill the skewers in a pan or under the broiler, turning them as they cook. 10 min

Leave them slightly pink in the center so they stay tender.

Our tips to get it right

  • Cut the lamb cubes roughly the same size so they all cook at the same rate on the skewer.
  • Take the lamb out of the fridge about fifteen minutes before grilling, it cooks more evenly at room temperature.
  • If you use metal skewers, turn them more often since they heat up faster than wooden ones.

The variations

  • Swap the lamb for cubed chicken, the marinade works just as well with white meat.
  • For a vegetarian version, thread zucchini, bell pepper and halloumi cubes instead of lamb.
  • For a quicker meal, skip the long marinating time and let the meat sit just long enough to prep the potatoes.

What to serve it with

  • A lemony green salad
  • Garlic and mint yogurt
  • Warm flatbread

Storage

The skewers and potatoes keep for 2 days in the fridge in a sealed container. Cooked lamb doesn't freeze well since it dries out when thawed, so it's best eaten fresh. Reheat gently in a pan or the oven to keep the meat from drying out.

Questions about this dish

Can you make the marinade ahead of time?

Yes, you can marinate the lamb the night before in a sealed container in the fridge. The meat will taste even better the next day.
