Crumbled black pudding mixes with caramelized apple cubes under a layer of mash that gratinates in the oven. The sweetness of the apples softens the bold flavor of the black pudding, while melted cheese adds the crunch a classic shepherd's pie often lacks. The green salad on the side, well dressed in vinaigrette, cuts through the richness and keeps you reaching for another bite.

This is a winter weeknight dish, the kind you put on the table on a Tuesday without overthinking it. Kids who turn their noses up at black pudding on its own often come around once it disappears into the mash and apples. You can also serve it on a Sunday evening, for a simple meal after a busy weekend, without giving up any flavor.

The step by step recipe

  1. Peel the potatoes, cut them into chunks, and cook them in salted water until they mash easily with a fork. 20 min

Start with cold salted water, the potatoes cook more evenly that way.

  2. Meanwhile, peel the apples, cut them into cubes, and saute them in half the butter with the sliced onion. 10 min

Let them brown without stirring too much, the caramelized edges give all the flavor.

  3. Remove the casing from the black pudding, crumble it into the pan with the apples and onion, and let it warm through for a few minutes. 5 min

Mash it with a fork off the heat, it crumbles better while still warm.

  4. Mash the potatoes with the hot milk, the remaining butter, nutmeg, salt, and pepper.

A potato ricer gives a much lighter texture than a hand mixer.

  5. Spread the black pudding and apples in a baking dish, cover with the mash, sprinkle with Emmental cheese, and bake at 200°C until golden. Serve with the salad dressed in oil and vinegar. 20 min

Switch on the broiler for the last thirty seconds for a nicely golden crust.

Our tips to get it right

  • Pick a black pudding that crumbles easily, one that's too firm will stay in big chunks in the dish.
  • Drain the potatoes well before mashing them, excess water makes the mash sticky once it's baked.
  • Toss the salad at the last minute, dressing it too early wilts the leaves.

The variations

  • Swap the black pudding for white pudding for a milder version that suits sensitive palates.
  • For a vegetarian version, replace the black pudding with sauteed mushrooms and red lentils, the gratin works just as well.
  • To save time, use ready made mashed potatoes and focus your attention on cooking the apples and black pudding.

What to serve it with

  • Green salad with vinaigrette
  • A glass of apple juice
  • Pickles or cornichons

Storage

This shepherd's pie keeps for 2 to 3 days in the fridge in a sealed container. It freezes well before or after baking, for up to 2 months. Reheat it in the oven so the top crisps up again, rather than in the microwave which softens the crust.
