Honey Thyme Pork Tenderloin with Roasted Carrots

Honey thyme pork tenderloin is a glazed pork roast served with tender roasted carrots, made in one pan for 4 people in 55 minutes. It's a very easy recipe, about €3.20 per person. The key is basting the tenderloin twice while it cooks so the glaze sets properly.

Pork tenderloin is a lean, tender cut that here gets a shiny glaze of honey and thyme, balanced by a touch of mustard. Roasting it alongside the carrots means the whole dish picks up that flavor, and the vegetables soak up the sweet, savory juices. The meat stays moist as long as you don't overcook it, and the carrots turn soft, almost caramelized at the edges.

This is the kind of dish you slide into the oven on a weeknight without a second thought, since it basically cooks itself while you do something else. Kids tend to love it for the honey's sweetness, and it's easygoing enough for a lazy Sunday dinner too. Mon Chou keeps it among its family classics because it asks for so little and never lets you down.

The ingredients

4 people

Butcher

  • Pork tenderloin 800 g

Fruits and vegetables

  • Carrots 800 g
  • Thyme 6 sprigs
  • Garlic 3 cloves

Pantry

  • Honeyoften in the pantry 3 tbsp
  • Olive oiloften in the pantry 3 tbsp
  • Mustardoften in the pantry 1 tbsp
  • Saltoften in the pantry 1 pinch
  • Pepperoften in the pantry 1 pinch

The step by step recipe

  1. Preheat the oven to 190°C. Peel the carrots and cut them into large chunks.

Split the thickest carrots lengthwise so they cook at the same rate as the others.

  2. Mix the honey, half the thyme, the mustard, salt, and pepper.

The mustard balances out the sweetness of the honey.

  3. Brush the pork tenderloin with this mixture and place it in a baking dish with the carrots, crushed garlic, and olive oil.

Tuck the carrots all around the meat so they soak up the juices.

  4. Roast, basting halfway through cooking. 35 min

If the honey starts to darken too much, cover with foil.

  5. Let the meat rest, slice the tenderloin, and serve with the carrots and pan juices. 5 min

While it rests, the juices redistribute, so the meat stays moist when you slice it.

Our tips to get it right

  • Pick a well trimmed tenderloin without much silver skin, it will cook more evenly and slice more cleanly.
  • Cut the carrots into roughly equal pieces so they all turn tender at the same time.
  • Check doneness with a knife tip in the center of the tenderloin, the juices should run clear, not pink.

The variations

  • Swap the pork tenderloin for veal tenderloin if you want a milder, pricier cut of meat.
  • For a vegetarian version, replace the meat with parsnips or roasted cauliflower brushed with the same honey mixture.
  • For a quicker meal that's easy on kids, cut the tenderloin into large cubes before roasting, it cooks faster and more evenly.

What to serve it with

  • Plain rice or steamed potatoes
  • Homemade mashed potatoes
  • A glass of sparkling apple juice

Storage

The pork and carrots keep for 2 to 3 days in the fridge in a sealed container. Reheat gently in a skillet or oven with a splash of the pan juices to keep the meat from drying out. You can freeze it, but the caramelized honey glaze loses a bit of texture once thawed.

Questions about this dish

Can you prep this ahead of time?

You can coat the tenderloin and prep the carrots the night before, then roast everything right before dinner. The dish loses quality if it's fully cooked too far in advance.

Can you replace the honey with something else?

Maple syrup works well instead of honey, giving a slightly thinner but still caramelized glaze. Plain sugar won't give you the same glossy coating.

How do you keep the tenderloin from drying out?

Stick to the suggested cooking time and let the meat rest before slicing it. Basting twice during roasting also helps keep the tenderloin juicy.

Is this dish kid friendly?

Yes, kids usually love the sweet honey flavor, and the sliced meat is easy to eat. You can cut the carrots smaller for younger children.

How long does it take to make a honey thyme pork tenderloin with roasted carrots?
