Sweet potato gives this soup a bright orange color and a naturally sweet taste that almost everyone enjoys, even picky kids. The texture turns silky and rich thanks to the cream, and the croutons add just the crunch you need once they hit the hot soup.

This is the kind of dish you can throw together on a weeknight without much thought, when you need something comforting but don't have hours to spare. It works just as well as a quick family dinner as it does a simple starter for guests, especially in fall or winter when sweet potatoes are at their best.

The step by step recipe

  1. Peel the sweet potatoes and cut them into cubes, thinly slice the onion.

Drop the cubes in cold water while you work, they won't turn brown.

  2. Sauté the onion in the oil, add the sweet potatoes and the broth, and let it cook. 25 min

The broth should just barely cover the vegetables, for a well concentrated soup.

  3. Blend with the cream, nutmeg, salt, and pepper.

Add a little hot broth if the soup turns out too thick.

  4. Cut the bread into cubes, toss them with oil, and bake until golden at 200°C. 8 min

Stir them halfway through so they brown evenly.

  5. Serve the soup with the croutons and a little shredded Swiss cheese.

A splash of lemon juice in the soup nicely balances the sweetness.

Our tips to get it right

  • Pick firm, deeply colored sweet potatoes, they release less water while cooking and give you a more concentrated soup.
  • For a deeper flavor, roast part of the sweet potatoes in the oven before adding them to the broth, just like Mon Chou's tip suggests.
  • Blend the soup while it's still hot for a perfectly smooth texture, a powerful immersion blender makes a real difference.

The variations

  • Swap the shredded Swiss cheese for Gruyère or Parmesan for a bolder flavor on the croutons.
  • For a dairy free version, use soy or oat based liquid cream instead of regular cream.
  • For busy kids' nights, serve the soup with store bought croutons and a few crispy bacon bits on top for a heartier version.

What to serve it with

  • A green salad with vinaigrette
  • Fresh bread alongside the croutons
  • Warm spiced apple juice

Storage

The soup keeps for 2 to 3 days in the fridge in a sealed container. It freezes very well without the croutons, for up to 2 months. Reheat it gently in a pot, stirring often, and make fresh croutons right before serving.
