This is the omelet that saves a night when nobody wants to think too hard about dinner. Ham brings the salty bite, Swiss cheese melts into ribbons as you fold it, and the eggs stay soft in the middle if you don't overcook them. The salad on the side lightens things up and adds crunch, and the bread is there for mopping up the plate.

This is the dinner for rushed weeknights, the one you throw together with whatever is already in the fridge. Kids love the melted cheese and the diced ham, adults appreciate how fast it comes together. You can make it on a busy Tuesday or on a quiet Sunday evening after a big lunch.

The step by step recipe

  1. Dice the ham.

Trim off the rind if needed.

  2. Crack the eggs into a bowl, add salt and pepper, and whisk with a fork.

    Don't overbeat them.

  3. Melt the butter until foamy in a hot pan, pour in the eggs, and stir from the edges toward the center. 3 min

The butter foam should settle down before you add the eggs.

  4. Add the ham and cheese, fold the omelet over, and let it melt for one minute.

Cover the pan for a minute so the cheese melts.

  5. Dress the salad with the oil, vinegar, salt, and pepper, and serve with the bread.

Cut the omelet into four right in the pan, it's easier to serve that way.

Our tips to get it right

  • Use a pan that's hot but not scorching, so the omelet sets quickly without browning too fast on the bottom.
  • Whisk the eggs just enough to combine yolks and whites, overbeaten eggs turn rubbery once cooked.
  • Take the eggs out of the fridge a little before cooking, they foam up better with the butter and cook more evenly.

The variations

  • Swap the ham for prosciutto or pan fried bacon bits for more bite.
  • For a vegetarian version, skip the ham and add sauteed mushrooms or wilted spinach instead.
  • For kids in a hurry, serve the omelet plain with just the cheese, no ham, and cut the toast into soldiers.

What to serve it with

  • A crisp green salad
  • Toasted country bread
  • A glass of fresh apple juice

Storage

The omelet keeps for 1 day in the fridge in a sealed container, but it's much better cooked just before eating. It doesn't freeze well, cooked eggs turn spongy. Reheat gently in a pan over low heat, or eat it cold, sliced.

Questions about this dish

Can I use a different cheese instead of Swiss?

Yes, Gruyere, Comte, or a raclette style cheese all work well. Pick a cheese that melts easily so you still get that stretchy effect when you fold the omelet.

How do I keep the omelet from turning out dry?

Take the pan off the heat while the center is still slightly runny, the residual heat finishes the job. Cooking it too long on the stove always dries out the eggs.

Can I make this omelet ahead of time?

This omelet is best cooked right before serving, since it loses its softness as it cools. You can dice the ham and grate the cheese ahead of time to save a few minutes.

Is this recipe good for kids?

Yes, kids usually love it thanks to the melted cheese and diced ham. You can reduce or skip the pepper for younger children.
