Under the golden cheese crust, the crepe stays soft and tender, soaked through with béchamel that spills out a little when you cut into it. The ham brings the saltiness, while a pinch of nutmeg warms the whole dish without overpowering it. It's comforting without feeling heavy, the kind of meal that fits right into shorter, colder days.
This is the sort of dinner that pleases the whole family, from kids who love crepes and melted cheese to adults rediscovering a dish from their own childhood. Save it for a quieter weeknight, since the batter's resting time fits easily around whatever else you're prepping.

The step by step recipe
-
Mix 150 g of flour, the eggs and 30 cl of milk to make the batter, add salt and let it rest. 30 min
Pour the milk over the flour little by little while whisking, you won't get any lumps.
-
Make the béchamel by melting 30 g of butter, stir in 50 g of flour then whisk in 60 cl of hot milk, season with salt, pepper and add the nutmeg. 10 min
Keep whisking nonstop as soon as the milk goes in, the sauce stays smooth.
-
Cook the crepes in a buttered pan, one ladle of batter at a time, then keep them warm. 15 min
The first crepe is your test run, don't worry if it doesn't turn out right.
-
Fill each crepe with half a slice of ham and a spoonful of béchamel, roll them up and arrange them in a buttered dish.
Save a bit of béchamel for the top, it keeps the crepes moist.
-
Top with the remaining béchamel, sprinkle with Swiss cheese and bake at 200°C until golden. Serve with the dressed salad. 15 min
Finish under the broiler for a nice golden crust.
Our tips to get it right
- Warm the milk for the béchamel before adding it to the roux, the sauce thickens faster and stays lump free.
- Use a hot crepe pan with just a little butter for each one, the crepes will release on their own.
- Pick a wide baking dish rather than a deep one, the crepes brown more evenly in a single layer.
The variations
- Swap the Swiss cheese for Gruyère or Comté for a bolder flavor.
- For a vegetarian version, replace the ham with cooked, well drained spinach or sautéed mushrooms.
- To save time, use store bought plain crepes and focus your effort on the béchamel and the broiling.
What to serve it with
- Green salad with vinaigrette
- Vegetable soup as a starter
- Applesauce for dessert
Storage
The baked crepes keep for 2 days in the fridge in a sealed container. They freeze well before baking, just thaw and bake them fresh on the day. Reheat in the oven rather than the microwave to keep the top crisp.
