This dish pairs crispy roasted chicken skin with a slightly sticky honey glaze scented with fresh thyme. The potatoes cook in the same pan, soaking up the pan juices and turning golden at the edges while staying soft inside. The unpeeled garlic cloves turn soft and almost spreadable, perfect smeared over the chicken.

This is a good weeknight dinner when you want something simple but comforting without spending hours in the kitchen. Kids tend to love the sweet honey glaze on the chicken, and it's easy enough to serve to guests on a Sunday too. One pan, minimal cleanup, it's also a practical choice for busy weeks.

  • Saltoften in the pantry 1 pinch
  • Pepperoften in the pantry 1 pinch

The step by step recipe

  1. Mix the honey, mustard, oil, thyme leaves, salt, and pepper.

Warm the honey for 10 seconds so it blends more easily.

Our tips to get it right

  • Pick chicken thighs of similar size so they all cook at the same rate.
  • Cut the potatoes into even wedges, not too thick or thin, so they roast through without drying out.
  • If your pan is small, use two sheet pans instead of crowding the chicken and potatoes together, the skin crisps up better when air can circulate around it.

The variations

  • Swap the lavender honey for acacia or chestnut honey depending on what you have, the result stays close.
  • For a vegetarian version, replace the chicken with butternut squash slices or cauliflower florets, roasted for the same amount of time.
  • To save time, use boneless thighs, which cook in about 35 minutes instead of 55.

What to serve it with

  • A sharply dressed green salad
  • Steamed green beans
  • A glass of sparkling apple juice

Storage

The chicken and potatoes keep for 2 to 3 days in the fridge in a sealed container. You can freeze the chicken alone for up to 2 months, though the potatoes don't freeze as well. Reheat in the oven at 180°C for about 15 minutes so the skin crisps back up.

Questions about this dish

Can you make the honey marinade ahead of time?

Yes, you can prepare it the day before and keep it in a sealed jar in the fridge. Take it out about 15 minutes before using so it's easier to brush on.

Can you use chicken breasts instead of thighs?

Yes, but breasts dry out faster, so cut the total cooking time by about 10 to 15 minutes. Keep an eye on them so they stay juicy.

Why leave the garlic unpeeled?

Unpeeled garlic cloves won't burn and turn soft inside as they roast. You can then squeeze the cloves directly onto your plate to flavor the chicken and potatoes.

Is this dish good for kids?

Yes, kids usually love the honey glaze, and the chicken stays tender. You can remove the whole thyme sprigs before serving if you prefer.
