For 4 people, it takes 30 minutes to make, is very easy, and costs about €2.30 per person. Solterito arequipeño combines soft potatoes, crunchy corn and fava beans, and salty feta, all brightened with a touch of lemon and chili. It's a hearty salad rather than a side dish, meant to fill you up without weighing you down, with colors that make you want to dig in as soon as the bowl hits the table.

It's the perfect dish for a spring or summer evening when it's too hot to cook for long, or for a lunch with friends that you can partly prepare ahead. It's not the best fit for young kids because of the olives and chili, but adults who love fresh, tangy South American flavors tend to love it.

The step by step recipe

  1. Boil the potatoes whole in salted water, then peel them and cut into cubes. 20 min

Poke them with the tip of a knife, they're done when the blade slides in easily.

  2. Drop the frozen fava beans into boiling water, cook them briefly, then rinse under cold water. 5 min

Remove the thin skin from the fava beans after cooking, they'll be more tender and a brighter green.

  3. Thinly slice the red onion and let it marinate in the lemon juice with a pinch of salt. 10 min

Squeeze the onion between your hands before marinating, it loses its sharpness much faster.

  4. Dice the tomatoes and cut the feta into small cubes, then drain the corn.

Seed the tomatoes so the salad doesn't end up too watery.

  5. Mix everything in a large bowl with the olives, chopped parsley, olive oil, chili, salt and pepper.

Add the feta last and gently, so it keeps its cube shape instead of crumbling.

Our tips to get it right

  • Let the potatoes cool before cutting them into cubes, they hold their shape better and won't turn mushy in the salad.
  • Taste the mix before adding salt, the feta and olives are already salty.
  • Assemble the salad shortly before serving rather than the day before, the vegetables stay crunchier and the colors stay brighter.

The variations

  • Swap the feta for fresh goat cheese if you prefer a milder, creamier flavor.
  • For a dairy free version, replace the feta with diced avocado, you'll still get that creamy texture.
  • For a quicker meal, use pre shelled fava beans and vacuum packed precooked potatoes, you'll save about ten minutes of prep.

What to serve it with

  • Lightly toasted country bread
  • Extra sliced avocado
  • Cold fresh lemonade

Storage

This salad keeps for 2 days in the fridge in a sealed container. It doesn't freeze well, the potatoes and cheese would change texture. Serve it cold or at room temperature, without reheating.

Questions about this dish

Can I use fresh fava beans instead of frozen?

Yes, if you can find fresh fava beans in season, shell them and boil for a few minutes. Just allow extra time for shelling and peeling before cooking.

What cheese can I use if I can't find feta?

A salty fresh cheese like sheep's milk cheese or drained farmer's cheese works well. The key is choosing a firm cheese that holds its cube shape in the salad.

Can solterito be made ahead of time?

You can cook and chop the vegetables the day before, but assemble the salad with the feta and dressing just before serving. This keeps all the crunch intact.

Why marinate the red onion in lemon juice?

Lemon juice softens the sharp bite of red onion and makes it easier to digest while turning it a lovely pink color. Five to ten minutes is enough to mellow it out.
