This tart pairs the bold punch of Auvergne blue cheese with soft, melting pears, while the walnuts add crunch to every bite. The cream and egg custard ties everything together and mellows the sharpness of the cheese, giving you a creamy result that never feels heavy.
It's a cold weather tart, ideal for a slightly more special weeknight dinner or a Sunday meal among adults, since blue cheese can be a tough sell for younger kids. Serve it warm with a well dressed green salad whenever the first chilly days roll in.

The step by step recipe
-
Roll out the dough in a tart pan and prick the bottom with a fork.
Roll it out on parchment paper to move it around easily.
-
Peel the pears, slice them thin and arrange them on the dough with the blue cheese in chunks.
Toss the pears with lemon juice if you're prepping ahead.
-
Beat the cream with the eggs, pepper and a little salt, then pour over the filling.
The blue cheese is already salty, go easy on the salt.
-
Sprinkle with chopped walnuts and bake at 180 °C. 35 min
Cover with foil if the walnuts brown too fast.
-
Let cool slightly and serve with the dressed salad.
A balsamic vinaigrette pairs really well with the pears.
Our tips to get it right
- Pat the pear slices dry with paper towel before arranging them, so the crust doesn't turn soggy.
- Blind bake the crust for ten minutes first if you like it extra crisp, especially with juicier pears.
- Let the tart rest for five minutes out of the oven before slicing, the filling sets better and cuts cleanly.
The variations
- Swap the Auvergne blue cheese for Roquefort or Gorgonzola for a different flavor, keeping the same amount.
- For a milder version, use reblochon or fresh goat cheese instead of blue cheese, the result will be less pungent.
- To save time, use store bought puff pastry and well drained canned pears.
What to serve it with
- Green salad with balsamic vinaigrette
- A glass of dry cider
- Squash soup to start
Storage
This tart keeps for 2 to 3 days in the fridge in a sealed container. It freezes well once baked and cooled, reheat it in the oven to keep the crust crisp. Skip the microwave, it will soften the dough.
Questions about this dish
Can I make this tart ahead of time?
Yes, you can bake it a few hours ahead and reheat it warm in the oven. Avoid assembling it too far in advance, the pears would release water and soften the crust.
What cheese works if I don't like blue cheese?
Roquefort or Gorgonzola pair just as well with the pears and walnuts. For a milder taste, reblochon also works nicely.
Why use pears that are just ripe instead of very ripe?
Overripe pears release a lot of water during baking and make the crust soggy. Firm but ripe pears stay soft without adding extra liquid.
Is this tart good for kids?
The strong flavor of Auvergne blue cheese might not appeal to younger palates. For a family friendly version, swap the blue cheese for a milder one like reblochon.
