Ham and cheese toast pizzas with side salad
Ham and cheese toast pizzas are a recipe for 4 people, ready in 25 minutes, very easy to make, for about €1.90 per person. Toasted sandwich bread replaces pizza dough and stays crisp under the tomato sauce and melted cheese. The key is toasting the bread before topping it, so it doesn't turn soggy.
Tonight, let's have fun with mini toast pizzas that the kids can top themselves, served with a side salad.

Toasted sandwich bread turns into a crunchy base, quite different from classic pizza dough. The oregano tomato sauce, diced ham and melted cheese give you that familiar pizza taste, in a version that's lighter to prepare and much faster. The vinaigrette salad on the side adds the freshness that balances the melted cheese.
This is a busy weeknight recipe, the kind you pull together when there's leftover sandwich bread and a slice of ham in the fridge. Kids love topping their own slice with ham and cheese, which turns dinner into something everyone gets to help with, no real cooking to watch over.

The step by step recipe
-
Preheat the oven to 220°C and arrange the bread slices on a baking sheet.
Line the sheet with parchment paper, the bread won't stick.
-
Toast the bread for three minutes in the oven so it dries out. 3 min
Flip it halfway through.
-
Mix the tomato sauce with the oregano, salt and pepper, and spread it over each slice.
One teaspoon per slice is enough, too much makes the bread soggy.
-
Top with ham cut into small squares, then with grated cheese.
Spread the cheese all the way to the edges, they won't burn.
-
Bake until the cheese bubbles, and serve with the salad dressed in oil and vinegar. 8 min
Dress the salad at the very last moment.
Our tips to get it right
- Pick a slightly thick sandwich bread, it holds up better under the toppings without tearing.
- Drain the tomato sauce a bit if it looks watery, so the bread doesn't turn soggy during baking.
- Watch the end of baking closely, the cheese should just start bubbling and browning, not burning.
The variations
- Swap the ham for cured ham or diced cooked chicken.
- For a vegetarian version, skip the ham and add mushroom or bell pepper slices before the cheese.
- For younger kids, cut the bread slices in half before topping them, it makes mini pizzas that are easier to hold.
What to serve it with
- Dressed green salad
- Raw carrot sticks
- Glass of fresh fruit juice
Storage
These pizzas are best eaten right away, the bread loses its crunch as it cools. If needed, keep leftovers in the fridge in a closed container for one day and reheat briefly in the oven to bring back some crispness.
Questions about this dish
Can you prepare these pizzas ahead of time?
You can season the tomato sauce and dice the ham ahead, but top and bake the bread right before serving so it stays crisp. Once assembled and baked, they're best eaten right away.
Can you freeze these toast pizzas?
It's not recommended, the sandwich bread turns soft and spongy once thawed. It's better to make them just before serving, since this is already a quick recipe that doesn't need planning ahead.
What cheese can you use instead of mozzarella?
Grated Swiss cheese works just as well and melts just as easily. A mix of both also gives a good result, with a bit more stretch from the mozzarella.
How do you adapt this recipe for young kids?
Let kids spread the ham and cheese on their own slice, it's a simple task they can handle. Cut the pizza into small pieces once it's out of the oven and has cooled a bit.
