Oatmeal and vegetable patties with salad

Oatmeal and vegetable patties are small golden patties made with oats, carrot, zucchini and Gruyère, served with a green salad. They serve 4, take 30 minutes, rate as very easy, and cost about €1.30 per person. Success comes down to letting the batter rest five minutes and pressing the grated vegetables well so they don't release water during cooking.

They generally like it

These patties have a golden, crisp edge from the skillet and a soft center where rolled oats mingle with grated carrot and zucchini. The Gruyère melts quietly inside, adding a salty note that wins over kids who usually eye vegetables with suspicion. Fresh parsley lifts the whole thing without ever taking over.

This is the kind of dish you pull together on a weeknight when you've got leftover carrots and a zucchini in the crisper drawer. Easy to improvise and quick to cook, it works just as well for a rushed dinner as for a low key Sunday night meal. Kids tend to love eating them with their fingers, dipped into a yogurt sauce.

The step by step recipe

  1. Grate the carrots and zucchini, then press them in a kitchen towel.

Press the zucchini especially well, it releases a lot of water.

  2. Mix the vegetables with the oats, eggs, Gruyère, parsley, salt and pepper. 5 min

Resting lets the oats soak up the moisture.

  3. Heat the oil in a skillet and shape patties with a large spoon.

Flatten them with the back of the spoon so they cook evenly.

  4. Brown the patties four minutes on each side over medium heat. 8 min

Flip them only once, with a wide spatula.

  5. Serve with the dressed salad.

A drizzle of garlic yogurt sauce is perfect for dipping.

Our tips to get it right

  • Grate the vegetables fairly fine so the patties hold together better and cook more evenly.
  • Don't crowd the skillet, leave space between patties so they brown instead of steaming.
  • If the batter still feels too wet after resting, stir in another spoonful of oats.

The variations

  • Swap the Gruyère for Comté or Emmental, whatever you have in the fridge.
  • For an egg free version, replace each egg with a tablespoon of ground flaxseed mixed with three tablespoons of water.
  • For kids in a hurry, shape smaller patties, they cook faster and eat like nuggets.

What to serve it with

  • Dressed green salad
  • Garlic yogurt sauce
  • Unsweetened applesauce

Storage

The patties keep two to three days in the fridge in a sealed container. They freeze well once cooked and cooled, just reheat in a skillet or oven afterward to keep them crisp.

Questions about this dish

Can I use something other than rolled oats?

Spelt or buckwheat flakes work just as well and give a similar texture. Avoid very fine instant oats, they make the batter too sticky.

How do I stop the patties from falling apart while cooking?

Press the grated vegetables well in a kitchen towel before mixing, excess water is the main reason patties crumble. Also let the batter rest five minutes before cooking.

Can I make the batter ahead of time?

Yes, you can make it a few hours ahead and keep it covered in the fridge. The oats keep absorbing moisture, which makes the patties even easier to shape.

Do kids actually like this dish?

Yes, the melted cheese and patty shape reassure kids who are wary of vegetables. Many prefer them dipped in sauce rather than served with the salad.
