Parisian ham and emmental salad

Parisian salad is a composed salad for 4 people with ham, emmental, raw button mushrooms, hard boiled eggs and potatoes. It takes 30 minutes to make, very easy level, for about €2.10 per person. The key is tossing the potatoes with the vinaigrette while they're still warm so they soak up the dressing.

Tonight, a Parisian salad just like at the bistro, with ham, emmental, raw mushrooms, hard boiled eggs and potatoes.

Parisian salad plays on contrast, soft potatoes, crunchy raw mushrooms, and chunky ham and emmental cut into sticks. Hard boiled eggs add roundness, and the mustard vinaigrette wakes everything up without overpowering it. This is a hearty salad, nothing like a light green salad, built to satisfy a real weeknight appetite.

It's the perfect dish when you want a complete meal without turning on the oven, on a spring or summer evening when it's too warm to cook for long. Mon Chou suggests it for busy family dinners, and it also works as a generous starter for guests who show up unannounced. It's not necessarily a kids' favorite because of the raw mushrooms and mustard.

The step by step recipe

  1. Cook the potatoes with their skin on in salted water, then peel them and cut them into rounds. 20 min

Plunge them into cold water, they peel easily.

  2. Boil the eggs in boiling water, cool them down and peel them. 10 min

Ten minutes gives you hard boiled eggs without a greenish ring.

  3. Make the vinaigrette with the mustard, vinegar, oil, salt and pepper, and pour it over the warm potatoes.

Whisk the mustard with the vinegar well before adding the oil.

  4. Cut the ham into strips, the emmental into sticks, the mushrooms into slices and the eggs into wedges.

Wipe the mushrooms with a damp cloth, they won't soak up water that way.

  5. Arrange the lettuce, potatoes and toppings on a large platter, and sprinkle with chives.

Save the eggs for the top, they stay in one piece.

Our tips to get it right

  • Pick waxy potatoes like fingerling or red bliss, they hold their shape in rounds without falling apart in the salad.
  • Slice the button mushrooms at the last minute, they darken fast once cut and lose their crunch.
  • Serve the salad warm or at room temperature rather than straight from the fridge, the ham and emmental taste better that way.

The variations

  • Swap the boiled ham for smoked ham or crispy bacon bits for more punch.
  • For a vegetarian version, skip the ham and add hearts of palm or cooked green beans instead.
  • For kids, replace the raw mushrooms with mushrooms sauteed for a few minutes in a pan, milder in taste and softer in texture.

What to serve it with

  • A fresh baguette
  • A glass of dry white wine
  • Chilled sparkling water

Storage

The salad keeps for 2 days in the fridge in an airtight container, as long as you hold off adding the vinaigrette if you want the potatoes to stay soft. It doesn't freeze well because of the hard boiled eggs and potatoes. Take it out of the fridge about 15 minutes before serving.
