The step by step recipe

  1. Mix the flour, egg, water and a pinch of salt into a soft dough, and let it rest. 20 min

Knead until the dough is smooth and no longer sticky.

  2. Cook the potatoes and mash them with the tomme cheese, the sautéed onion, parsley, salt and pepper. 20 min

The filling should be fairly dry.

  3. Roll out the dough thinly and cut out 4 inch rounds.

An upside down cup makes a perfect cutter.

  4. Fill each round with the filling, fold into a half moon shape and seal the edges with a fork.

Lightly moisten the edges to seal them well.

  5. Fry the tourtons in hot oil until golden, and serve with the salad. 8 min

The oil should be at 340°F, a bit of dough should sizzle gently when dropped in.

Our tips to get it right

  • Drain the potatoes well after cooking and let them cool slightly before mashing, a filling that's too wet will make the dough soggy.
  • Work the dough on a floured surface and roll it out as thin as possible, it needs to stay pliable so the edges seal properly.
  • Fry the tourtons in small batches so the oil stays hot and they brown evenly.

The variations

  • Swap the fresh tomme for reblochon or another local soft cheese for a creamier filling.
  • For a lighter version, bake the tourtons at 400°F for 20 minutes instead of frying them.
  • For kids, shape smaller tourtons, easier to eat with fingers and quicker to cook through.

What to serve it with

  • Green salad with a sharp dressing
  • Mountain cured meats as a starter
  • A glass of dry white wine

Storage

Raw tourtons keep for 2 days in the fridge in a sealed container, and freeze well before cooking. Reheat already cooked tourtons in the oven for a few minutes to bring back their crunch.
