Landaise salad doesn't taste like any other salad. The confit gizzards bring a soft, salty richness, the smoked duck breast adds a drier, more aromatic note, and golden croutons cut through it all with crunch. With sautéed potatoes on the side, this is far from a light composed salad, it's a true Southwest French meal, generous and filling.

This recipe works well for a weeknight dinner when you want something hearty without spending hours cooking, or for a summer lunch outdoors with other adults. It appeals most to people who love duck and bold flavors, less to kids who might find the gizzards too strong. Reach for it on nights when you want a full meal, starter and main combined on one plate.

The step by step recipe

  1. Cut the potatoes into cubes, boil them, then sauté in a pan. 25 min

Parboil the potatoes in water first, they brown faster afterward.

  2. Cut the bread into cubes and toast until golden. 5 min

Rub the bread with a garlic clove before toasting it.

  3. Warm the gizzards in a pan. 5 min

Drain off some of the gizzards' fat, they already have plenty.

  4. Make the vinaigrette with the vinegar, mustard and walnut oil.

Whisk the vinaigrette well to emulsify it.

  5. Assemble the salad with all the ingredients.

Season at the last moment, the salad keeps its crunch.

Our tips to get it right

  • Take the confit gizzards and smoked duck breast out of the fridge a bit before serving, they taste better at room temperature than cold.
  • Pick a firm potato variety like fingerling or new potatoes, they hold their shape during cooking and brown without falling apart.
  • Serve the salad in one large dish rather than individual plates, so everyone can help themselves to what they like best.

The variations

  • Swap the smoked duck breast for cured ham or prosciutto for a milder version.
  • For a vegetarian version, replace the gizzards and duck breast with toasted walnuts and warm goat cheese, keeping the Southwest French spirit intact.
  • For kids, serve the sautéed potatoes separately with a bit of finely sliced smoked duck breast, skipping the gizzards.

What to serve it with

  • A glass of dry white wine
  • Extra slices of country bread
  • A little sheep's milk cheese for dessert

Storage

Keep the components separate in the fridge in sealed containers, up to 2 days for the raw salad and gizzards. Only reheat the gizzards and potatoes in a pan, and don't freeze this dish since the lettuce and tomatoes won't hold up to freezing.

Questions about this dish

Can you substitute the confit duck gizzards?

Yes, confit chicken gizzards work if you can't find duck. The flavor will be a bit milder but the texture stays the same.

Can you make this salad ahead of time?

You can chop the vegetables and make the vinaigrette a few hours ahead. Warm the gizzards and sauté the potatoes just before serving to keep the right textures.

Does it have to be walnut oil?

Walnut oil gives this vinaigrette its distinctive Southwest French flavor, which really makes a difference. Hazelnut oil works just as well if you don't have it.

Yes, if you have leftover cooked potatoes from the day before, just sauté them directly in the pan, which shortens the prep time.
