Veal kidneys with mustard sauce is the dish that wins people over on offal. Seared for just a few minutes over high heat, they stay tender and pink at the center, far from the rubbery texture people sometimes expect. The mustard and cream sauce, brightened with a splash of white wine, softens their distinctive flavor without hiding it completely.

This is a weeknight dish that feels like a Sunday bistro meal, quick to put together but one that asks for your full attention during cooking. It suits an adult dinner or easy entertaining, with plain white rice soaking up the sauce without taking anything away from it.

The step by step recipe

  1. Remove the membrane and the white parts from the kidneys, then slice them into strips.

Well trimmed kidneys have no strong flavor.

  2. Cook the rice in boiling salted water. 11 min

Drain it and keep it warm.

  3. Sear the kidneys over high heat in the butter, in small batches, then set them aside. 6 min

Too many kidneys at once release water and they end up simmering instead of searing.

  4. Sweat the shallots, deglaze with the white wine, then add the cream and mustard. 5 min

Thicken the sauce off the heat, the mustard shouldn't boil.

  5. Return the kidneys to the sauce just to warm them through, then serve with the rice and parsley. 2 min

Skip the stock, or the kidneys will toughen.

Our tips to get it right

  • Pick kidneys that feel firm and have no strong smell, a sign of freshness, from a butcher you trust.
  • Heat the butter until it foams before adding the kidneys, the sear needs to happen right away.
  • Cook the rice just before finishing the sauce, so everything reaches the table hot at the same time.

The variations

  • Swap the Dijon mustard for whole grain mustard for a chunkier, milder sauce.
  • For an offal free version, replace the kidneys with thin strips of veal or chicken seared the same way.
  • Serve the sauce over fresh pasta or mashed potatoes instead of rice, depending on what you have on hand.

What to serve it with

  • A glass of dry white wine
  • A sharply dressed green salad
  • Bread for mopping up the sauce

Storage

The kidneys keep for 1 day in the fridge in a sealed container, since they don't hold up well to repeated reheating. Avoid freezing them, the texture suffers a lot. Reheat very gently over low heat, without letting the sauce boil.

Questions about this dish

How do you prepare veal kidneys before cooking?

Carefully remove the thin membrane and the white, sinewy core, they give off a strong unpleasant flavor. Then slice the kidneys into even strips for quick, even cooking.

Can you use light cream instead of heavy cream?

You can, but the sauce will be less rich and may split more easily once the mustard is added. A classic full fat cream gives a more stable, satisfying sauce.

Can you make this dish ahead of time?

It's best to cook the kidneys and sauce right before serving, since extended cooking or reheating toughens them. You can, however, cook the rice and slice the shallots in advance.

Why do kidneys sometimes release a lot of liquid while cooking?

This happens when too many go into the pan at once, the temperature drops and they simmer instead of searing. Cook them in small batches in very hot butter.

Count 30 min in total, prep and cooking included. The recipe is rated “medium”.
