Tuna stuffed baked potatoes with green salad

Tuna stuffed baked potatoes are large potatoes baked whole, hollowed out and filled with a tuna, cream and cheese mixture, then served with a green salad. This recipe serves 4, takes 1h15 and costs about €2.40 per person. The key is baking the potatoes properly first, so the flesh stays soft before the final gratin under the grill.

Under the crisp skin, the potato flesh turns into a creamy filling, lifted by the tuna and fresh chives. The melted Swiss cheese that browns in the oven gives you that gratin top everyone wants to scrape with a fork, while the green salad on the side keeps the plate from feeling heavy.

This is the kind of dish that feels like a hug on a weeknight without asking much of you, since the oven does most of the work while you handle something else. Mon Chou also suggests it for a relaxed Sunday dinner, kids usually enjoy digging into their own potato.

The step by step recipe

  1. Preheat the oven to 200°C. Wash the potatoes, prick them and put them in the oven. 50 min

Set them directly on the oven rack for a crisper skin.

  2. Cut a lid off each potato and scoop out the flesh with a spoon, leaving a thin wall.

Leave about a centimeter of flesh so the potato holds its shape.

  3. Mash the flesh with the drained tuna, cream, shallot, chives, salt and pepper.

Taste the filling, it should be well seasoned.

  4. Fill the potatoes with the mixture and sprinkle with Swiss cheese.

Shape a small dome, the gratin will be more generous.

  5. Bake again until the cheese turns golden, then serve with the dressed salad. 15 min

Finish under the broiler for a minute to brown the top.

Our tips to get it right

  • Pick starchy potatoes like russets, they mash easily and soak up the filling well.
  • Drain the tuna thoroughly before mashing it with the potato flesh, otherwise the filling turns watery and won't hold in the shell.
  • If your potatoes are very large, give them a few extra minutes in the first bake, a knife tip should slide in with no resistance.

The variations

  • Swap the tuna for flaked smoked salmon for a more refined version, worth saving for a slightly special dinner.
  • For a fish free version, replace the tuna with chopped mushrooms sautéed with the shallot.
  • To go faster with hungry kids, microwave the potatoes for ten minutes before finishing them in the oven, this cuts the total cooking time in half.

What to serve it with

  • Green salad already included in the recipe
  • A squeeze of lemon over the salad
  • A cold sparkling water

Storage

Stuffed potatoes keep for 2 days in the fridge in a closed container. They freeze well once stuffed, before the final bake. Reheat them in the oven at 180°C until hot all the way through.
