Gröstl is the kind of dish that turns leftovers into a real meal. Crispy on the outside and soft inside, the potatoes mingle with smoky bacon, golden onions, and ham, all finished with a fried egg that spills its yolk when you cut into it. It's hearty, seasoned with paprika and caraway, and smells like a mountain kitchen on a cold day.

It's a perfect weeknight dish when you have leftover boiled potatoes or a bit of roast to use up. Mon Chou suggests it for evenings when you want a filling dinner without spending hours at the stove. Kids tend to love the fried egg and the crispy potatoes, making this a friendly introduction to more traditional dishes.

The step by step recipe

  1. Slice the boiled potatoes into rounds and cut the ham into cubes.

Cold potatoes slice cleanly without crumbling.

  2. Render the bacon in a large skillet, add the sliced onions and let them turn golden. 10 min

Keep the bacon fat in the pan, it helps the potatoes brown.

  3. Add the butter and the potatoes, spread them out in one layer and let them crisp up before flipping. 15 min

Be patient, flip them only once the bottom is well browned.

  4. Add the ham, paprika, and caraway, then season lightly with salt and pepper. 5 min

Taste before salting, the bacon and ham are already salty.

  5. Fry the eggs separately and place one on top of each portion, with chives. 5 min

Cook the eggs over low heat in a little butter for a tender white.

Our tips to get it right

  • Use a wide skillet so the potatoes sit in a single layer, otherwise they steam instead of browning.
  • Don't season too early, the bacon and ham already release salt as they cook.
  • If you don't have potatoes boiled the day before, boil or steam them ahead of time and let them cool completely before slicing.

The variations

  • Swap the ham for leftover shredded pork or beef roast, which is actually closer to the dish's original version.
  • For a vegetarian take, skip the bacon and ham, add mushrooms and a bit of grated cheese at the end.
  • For kids, go lighter on the spices, plain sweet paprika is enough, and cook the egg a bit more if they prefer a firmer yolk.

What to serve it with

  • A green salad with vinaigrette
  • Pickles or a simple coleslaw
  • A glass of sparkling apple juice

Storage

Gröstl keeps for 2 days in the fridge in a sealed container, without the egg, which should always be cooked fresh. Reheat it in a skillet over medium heat so it regains some crispness, the microwave makes it too soft.
