In Alsace, fleischkiechle is the everyday meat patty, shaped by hand and pan fried until it forms a deep brown crust. The beef and pork blend keeps the texture tender, the milk soaked bread keeps it light even after cooking, and the parsley with chives give it a fresh note that sets it apart from an ordinary burger patty.

This is a weeknight dish that doesn't call for anything hard to find, perfect when you want to feed the whole family without spending your evening in the kitchen. Kids tend to like the patty shape better than a whole cut of meat, and the sautéed potatoes on the side are always a hit. It works well for a cozy fall or winter dinner.

The step by step recipe

  1. Soak the bread in the milk, press it out, then crumble it.

Use bread from the day before, it breaks down more easily.

  2. Mix the ground meats, egg, chopped onion, herbs, bread, salt and pepper.

Cook a small test ball to check the seasoning.

  3. Shape the mixture into patties about the size of your palm, fairly flat.

The flatter they are, the better they brown.

  4. Cook the diced potatoes in the oil, stirring as little as possible. 25 min

Cover for ten minutes, then uncover to let them brown.

  5. Brown the patties in butter, six minutes per side, and serve with the sautéed potatoes. 12 min

Don't press them with the spatula, they would lose their juices.

Our tips to get it right

  • Chop the onion very finely so it cooks through with the meat instead of staying crunchy in the patty.
  • Let the meat mixture rest in the fridge for ten minutes before shaping, it holds together better while cooking.
  • Cut the potatoes into evenly sized cubes so they all brown at the same rate.

The variations

  • Swap the pork for sausage meat for a more seasoned patty.
  • For a vegetarian version, use a mix of chopped plant based protein and a little grated cheese to bind it.
  • For a quicker meal, shape smaller, thinner patties, they'll cook in about half the time.

What to serve it with

  • A green salad with vinaigrette
  • Homemade applesauce
  • Sparkling water with lemon

Storage

Fleischkiechle keep for 2 to 3 days in the fridge in a sealed container. They freeze well once cooked and cooled, for up to 2 months. Reheat the patties in a pan over low heat so they don't dry out, rather than in the microwave.

Questions about this dish

Can I prepare the meat mixture ahead of time?

Yes, you can mix it the day before and keep it covered in the fridge. Shape the patties right before cooking so they hold their shape.

Can I use breadcrumbs instead of stale bread?

Yes, but reduce the amount of milk since breadcrumbs absorb it faster. Soaked bread gives a softer texture, while breadcrumbs make a denser patty.

How do I know if the patties are seasoned enough?

Cook a small test ball of the mixture in a pan before shaping all the patties. Taste it, then adjust the salt and pepper in the rest of the mix.

Will kids like this dish?

Yes, the patty shape is usually more appealing to kids than a whole cut of meat, and the flavor stays mild thanks to the bread and milk. You can cut back on the pepper if your kids prefer milder flavors.
