Farçous are a garden style pancake, the kind of dish built around whatever is growing fast in spring or summer, usually Swiss chard. A thick batter coats the chopped leaves, garlic, and parsley, and pan frying creates a golden crust around a soft, fragrant center. It's simple, green, and a nice break from plain steamed vegetables.

This is an easy weeknight dinner since everything cooks in a single pan, and kids tend to enjoy picking up these little pancakes with their fingers. Served with a lightly dressed green salad, the meal feels complete without much effort, and it's a smart way to use up extra Swiss chard from the garden or market.

The step by step recipe

  1. Wash the Swiss chard, remove the thick stalks, and finely chop the leaves with the parsley and garlic.

Save the stalks for a gratin, they're delicious.

  2. Beat the eggs with the flour and milk, season with salt and pepper, then fold in the chopped chard.

The batter should be thick, a bit like a fritter batter.

  3. Heat a little oil in a pan and drop small spoonfuls of batter into it.

Press gently with the back of the spoon to shape the pancakes.

  4. Brown the farçous on each side. 8 min

Only flip them once the bottom is nicely golden, or they'll fall apart.

  5. Place them on paper towels and serve with the dressed salad.

Eat them hot, they lose their crispness as they cool.

Our tips to get it right

  • Squeeze the Swiss chard well after washing, excess water makes the batter too runny and keeps the pancakes from browning properly.
  • Heat a nonstick pan thoroughly before adding the batter, this keeps the farçous from sticking and tearing when you flip them.
  • Cook them in batches rather than crowding the pan, so each pancake cooks evenly and gets a crisp edge.

The variations

  • Swap in fresh spinach if you can't find Swiss chard, the flavor is milder but the texture stays close to the original.
  • Stir a spoonful of grated cheese into the batter for a richer version, without changing anything else in the recipe.
  • For impatient kids, shape smaller pancakes, they cook faster and can be eaten like mini blinis.

What to serve it with

  • Green salad with vinaigrette
  • Fresh sheep's cheese or tomme
  • A glass of dry white wine

Storage

Farçous keep for 2 days in the refrigerator in a sealed container. Reheat them in a pan for a few minutes to bring back some crispness. They can be frozen, but the texture will be softer once thawed.

Questions about this dish

Can you make the farçous batter ahead of time?

Yes, you can mix the batter a few hours ahead and keep it in the fridge. Stir it well before cooking since the Swiss chard releases water as it sits.

What if the batter turns out too runny?

Add flour a spoonful at a time until the batter is as thick as a fritter batter. Swiss chard releases water, so the exact amount can vary depending on how fresh it is.

Can you use a different leafy green instead of Swiss chard?

Spinach or even radish tops work well in place of Swiss chard. Chop them just as finely to keep the pancakes holding their shape.

Are farçous a good dish for kids?

Yes, kids tend to like them since they can eat them with their fingers and the batter softens the taste of the greens. Make smaller pancakes so they're easier for little hands to hold.
