Chorrillana with fries, steak, sausage and fried eggs
Chorrillana is a Chilean dish for 4 people that takes 50 minutes to make, rated easy, at about €3.40 per person. It layers fries, steak, Frankfurter sausages and fried eggs on one big platter. The key to getting it right is the order you build it in, fries on the bottom so they stay crispy under the juices from the meat.
Tonight we're putting one big plate in the middle of the table, a chorrillana, crispy fries under the steak, sausage and eggs.

Chorrillana plays on contrast, fries that stay crispy under meat that's just been seared, onions that keep some bite, and fried eggs whose yolks run over everything the moment you serve it. It's a generous dish meant to be shared straight from the cooking platter, no individual plates needed at first.
It's the perfect idea for a night when everyone's hungry and nobody wants to plate up three separate dishes. Kids love picking out the fries and sausage, while adults enjoy the well seasoned steak. Mon Chou suggests it for fall or winter evenings when one big hot platter in the middle of the table beats a meal served out individually.

The step by step recipe
-
Bake the fries in the oven at 220°C until golden. 25 min
Flip them halfway through for even color.
-
Slice the onions and cook them in a skillet with oil, salt and garlic until soft. 15 min
They should stay a bit firm to add some crunch.
-
Cut the skirt steak into strips, season with paprika, oregano, salt and pepper, and sear over high heat. 6 min
Cook it in small batches so it stays well seared.
-
Slice the sausages into rounds and brown them alongside the meat. 5 min
Rounds brown better than whole sausages.
-
Spread the fries on a large platter, top with the meat, sausage and onions, then place the fried eggs on top. 4 min
Serve the platter in the middle of the table with forks for everyone.
Our tips to get it right
- Drain the onions well after cooking so they don't make the fries soggy once you assemble the platter.
- Cook the meat and sausage right before you build the dish, they need to hit the fries while still hot.
- Use a wide, shallow platter rather than a deep dish, the heat spreads better and the fries stay crispy longer.
The variations
- Swap the steak for ribeye or rump steak if you want a slightly more tender cut.
- For a vegetarian version, replace the meat and sausage with sauteed mushrooms and plant based sausages.
- To speed things up for hungry kids, use fries pre cooked in the microwave and jump straight to cooking the meat.
What to serve it with
- Homemade hot sauce
- A lemony green salad
- A cold dark beer
Storage
Chorrillana keeps for 2 days in the fridge in a sealed container, though the fries lose their crispness. Reheat the meat and sausage in a skillet and cook fresh fries rather than reheating the whole dish. Freezing isn't recommended because of the eggs and fries.
Questions about this dish
Can you make chorrillana ahead of time?
You can cook the meat, sausage and onions ahead and reheat them before serving. The fries and eggs should always be made last so they keep their texture.
What's a good substitute for the steak?
Ribeye or rump steak cut into strips work just as well. The key is slicing the meat thin so it cooks fast over high heat.
Can you make chorrillana without eggs?
Yes, you can skip the fried eggs if someone doesn't eat them. The dish still feels complete with the meat, sausage and onions.
How do you keep the fries crispy under the meat?
Spread the fries in a thick layer and add the meat just before serving, while it's still hot. The faster you assemble it, the crispier the fries stay.
