Spring

This skillet smells like spring from the first minutes, with the tender green of fava beans and peas warmed by fresh mint and lemon. Parmesan adds a salty edge that lifts the vegetables without covering them, and the soft boiled egg on top turns into an instant sauce, light and fragrant.

It's the kind of dish you make on a weeknight once fresh fava beans and peas show up at the market, or for a quiet Sunday lunch for two. Kids can be hesitant about fava beans, but the parmesan and toasted bread often win them over.

The step by step recipe

  1. Lower the eggs into boiling water and cook them until soft boiled, then cool them under cold water. 6 min

Lower them into already boiling water with a spoon, for a cooking time you can repeat every time.

  2. Cook the fava beans and peas in boiling salted water, then drain. 5 min

An ice water bath right after keeps their bright color.

  3. Sauté the sliced spring onions in the oil and butter, add the vegetables and toss. 5 min

Save some of the green part of the onions for plating, it adds crunch.

  4. Off the heat, add the chopped mint, lemon juice, salt, pepper, and grated parmesan.

Add the mint at the very last minute, it turns dark with heat.

  5. Gently peel the eggs, set them on top of the skillet, and serve with toasted bread.

Peel them under running water, the shell comes off almost in one piece.

Our tips to get it right

  • Pick good quality fava beans and peas, frozen or freshly shelled, their freshness really shows in the final taste.
  • Don't oversalt the cooking water for the vegetables, taste at the end and adjust the salt and pepper when seasoning.
  • Serve the dish right after peeling the eggs, the warmth of the skillet against the runny yolk is the whole point.

The variations

  • Swap the parmesan for crumbled feta for a tangier, more Mediterranean touch.
  • For an egg free version, add small cubes of ricotta or fresh goat cheese instead of the soft boiled eggs.
  • To save time, use only frozen peas and skip shelling fresh fava beans.

What to serve it with

  • A lemony green salad
  • Sparkling water with lemon
  • Fresh sheep's milk cheese

Storage

Keep the vegetable skillet on its own, in a sealed container in the fridge, for up to 2 days. Soft boiled eggs are best eaten the same day, they don't hold up well once cooked. Reheat the vegetables gently in a pan, without boiling them, so they don't dry out.

Questions about this dish

Can I use fresh fava beans and peas instead of frozen?

Yes, and it's even better in season. Allow extra time to shell fresh fava beans and peas, and check their doneness with a fork.

How do you get a perfect soft boiled egg every time?

Lower the egg into already boiling water with a spoon and time exactly 6 minutes. Cool it under cold water right after to stop the cooking and make peeling easier.

Can this dish be made ahead?

You can cook and season the vegetables ahead, then reheat them gently before serving. Cook the soft boiled eggs at the last minute, they lose their appeal once cold.

What can replace parmesan if I don't have any?

Another hard cheese like pecorino works very well instead. You can also use a bit of grated gruyere for a milder flavor.
