Ham and cheese crepe bake with salad

A ham and cheese crepe bake is made of rolled crepes filled with ham and Swiss cheese, covered in béchamel and baked until golden, served with a salad. It serves 4, takes 50 minutes, rates as easy, and costs about €2.20 per person. The key is a smooth béchamel and a quick finish under the broiler to brown the top.

Tonight, rolled ham and cheese crepes, covered in béchamel and baked until golden, with a salad on the side for freshness.

Under the golden béchamel, the crepes stay soft and the ham almost melts into the Swiss cheese, which still pulls a little when you cut in. Nutmeg seasons the sauce without anyone quite identifying it, it just rounds out the flavor. The salad on the side brings the freshness that balances the rich, melty bake.

This is the dinner for nights when you want something warm and comforting without spending the whole evening cooking. Kids love unrolling their crepe to see the stretchy ham and cheese inside, and adults appreciate a homemade béchamel that beats anything from a jar. You can also prep it ahead for a relaxed Sunday night.

The step by step recipe

  1. Whisk 200 g of flour with the eggs, 40 cl of milk and a pinch of salt, then cook eight thin crepes in a buttered pan. 20 min

Let the batter rest for twenty minutes if you can, it becomes smoother.

  2. Make the béchamel by melting 40 g of butter, stirring in the remaining flour, then whisking in 50 cl of hot milk. 10 min

Pour the hot milk all at once onto the roux, the sauce stays smooth.

  3. Season the béchamel with nutmeg, salt and pepper.

It should coat the back of a spoon, add a little milk if it's too thick.

  4. Fill each crepe with half a slice of ham and some Swiss cheese, roll it up and arrange in a buttered baking dish.

Pack the rolls close together so they don't unroll.

  5. Cover with béchamel, sprinkle the remaining cheese on top and bake at 200°C, then serve with the dressed salad. 15 min

Finish under the broiler, the top turns golden in spots.

Our tips to get it right

  • Butter the baking dish well before arranging the rolled crepes, they'll lift out more easily when you serve.
  • Cook the crepes over medium heat, too high and they brown before cooking through, which makes them brittle.
  • Spread the béchamel all the way to the edges of the dish, the crepe tips shouldn't dry out under the broiler.

The variations

  • Swap the ham for turkey ham or grilled bacon bits for a different flavor.
  • For a vegetarian version, skip the ham and add cooked, drained spinach to the filling instead.
  • For a quick kid friendly version, use store bought crepes and spend your time on the béchamel and the broiling instead.

What to serve it with

  • A well dressed green salad
  • Cherry tomatoes on the side
  • A glass of apple juice

Storage

The baked crepes keep for 2 to 3 days in the refrigerator in a closed container. They freeze well once cooled, either before or after baking. Reheat in the oven at 180°C until hot and lightly golden on top again.
