The step by step recipe

  1. Mix the quinoa with the eggs, cheese, chopped herbs, breadcrumbs, salt and pepper.

The quinoa needs to have cooled down, otherwise the eggs would cook on contact.

  2. Make the sauce with the yogurt, lemon juice, a bit of oil, salt and pepper.

Grate in a little lemon zest, it makes the sauce much more fragrant.

  3. Shape eight patties, pressing them firmly in your palm.

Wet your hands so the mixture doesn't stick.

  4. Brown the patties in hot oil, four minutes per side. 8 min

Don't move them until the crust has set, they'll release on their own.

  5. Serve the patties with the dressed salad and the yogurt sauce.

Dress the salad at the last moment so it stays crisp.

Our tips to get it right

  • If the mixture feels too wet to hold a patty shape, add an extra spoonful of breadcrumbs rather than more liquid.
  • Use a nonstick pan and wait until the oil is properly hot before adding the patties, they'll stick less.
  • For patties that are all the same size, use a round cookie cutter or a glass to shape them evenly.

The variations

  • Swap the Swiss cheese for grated parmesan for a stronger flavor.
  • For an egg free version, bind the mixture with two tablespoons of mashed chickpeas instead of the eggs.
  • For kids in a hurry, shape small round bites instead of patties, they cook faster and are easy to eat with fingers.

What to serve it with

  • Some bread to scoop up the sauce
  • Extra cherry tomatoes on the side
  • A cold glass of lemon water

Storage

Cooked patties keep for 2 days in the fridge in a closed container. They also freeze well once cooled, just reheat them straight in a pan or in the oven. Make the yogurt sauce just before serving, it doesn't keep much more than a day.

Questions about this dish

Can I use leftover quinoa from the day before?

Yes, it's actually better. Day old quinoa is drier and holds together better in the patties than freshly cooked, still warm quinoa.

Can I prepare the mixture ahead of time?

Yes, you can make the mixture the night before and keep it in the fridge. It will only get better, as the quinoa has more time to absorb the moisture.

What can I use instead of breadcrumbs?

You can use flour or coarsely blended oats instead. The goal is just to give the mixture a bit of structure.

Can kids who don't like herbs still eat these patties?

Yes, you can simply reduce the amount of chives and parsley, or leave them out entirely. The cheese and quinoa flavor still comes through.
