Pork gyros in pita is a Greek recipe for 4 people, ready in 50 minutes, rated easy, for about €2.90 per person. The key to success is cutting the pork into very thin strips, marinating it, then searing it in a very hot pan, plus draining the tzatziki well so it stays thick.

Pork marinated in lemon, oregano and paprika picks up a bold grilled flavor the moment it hits a hot pan. The thin strips cook in minutes and stay tender, playing off the crunch of homemade fries and the coolness of tzatziki. Inside a warm pita, everything comes together, hot meat, cool sauce, crisp vegetables.
This is a weeknight dinner that feels different without needing special equipment, just a pan and an oven. Kids love building their own pita, and adults enjoy that vacation flavor without leaving the kitchen. Mon Chou likes to bring this one out as soon as the weather warms up, for a meal you eat with your hands.

The step by step recipe
-
Cut the pork into strips and mix with the oil, lemon juice, oregano, paprika, 1 pressed garlic clove, salt and pepper. Let it marinate. 20 min
The longer it marinates, the more tender it gets, up to overnight in the fridge.
-
Cut the potatoes into fries, pat them dry, then bake at 220°C with a drizzle of oil and some salt. 30 min
Flip them halfway through so they brown on all sides.
-
Make the tzatziki by grating the cucumber, pressing out the water well, then mixing it with the yogurt, the remaining garlic and a drizzle of oil.
Squeeze the cucumber in a kitchen towel, otherwise the tzatziki turns watery.
-
Grill the pork strips in a very hot pan without crowding them. 8 min
Cook in two batches if needed, crowded strips steam instead of searing.
-
Warm the pitas, then fill them with pork, tzatziki, tomatoes, sliced red onion and fries.
Put the fries right inside the pita, that's the real Greek way.
Our tips to get it right
- Heat your pan well before adding the pork so it sears instead of steaming in its own juices.
- Drain the grated cucumber thoroughly, a watery tzatziki will soak through the pita in minutes.
- Make the tzatziki first, the resting time in the fridge lets the flavors develop while you handle everything else.
The variations
- Swap the pork for sliced chicken, the marinade works just as well and the cooking time stays just as quick.
- For a vegetarian version, replace the meat with chickpeas roasted with paprika and oregano.
- To save time, use frozen fries and store bought tzatziki, the assembly stays the same.
What to serve it with
- A cucumber and tomato salad
- Black olives as a starter
- A cold glass of lemon water
Storage
Store the cooked pork, tzatziki and fries separately in sealed containers, up to 2 days in the fridge. Reheat the pork in a pan and the fries in the oven so they don't go soft, but the tzatziki doesn't freeze well.

Pork tenderloin or thinly sliced pork butt also work well. Avoid very lean cuts, they dry out quickly when seared.
