The glass noodles soak up a sauce of garlic, ginger and black pepper while the shrimp cook just above them, steaming inside the closed Dutch oven. The result is translucent, fragrant noodles soaked in soy sauce and oyster sauce, with shrimp that stay tender and never turn rubbery. The black pepper gives a gentle heat in the background, never overpowering.

This is a dish that works on a weeknight, because the Dutch oven does most of the work while you set the table. Kids like it too, the noodles are mild and not spicy, and it works for guests, since the pot arrives steaming straight to the table. Mon Chou likes to slot this one into a busy week.

The step by step recipe

  1. Soak the glass noodles in hot water until soft, then drain them. 10 min

Cut them in half with scissors, they mix together more easily.

  2. Pound the garlic, cilantro roots or stems, ginger and pepper, then mix with the sauces, sugar and oil.

Cilantro stems are very fragrant, don't throw them away.

  3. Pour the sauce over the noodles in a Dutch oven, add the sliced mushrooms and mix.

Mix well so every strand gets coated.

  4. Place the shrimp on top of the noodles, cover and bake at 200°C. 20 min

A tightly closed Dutch oven is essential, it creates the steam that cooks the shrimp.

  5. Take the pot out, mix gently and sprinkle with cilantro and green onion.

Serve straight from the Dutch oven to keep it warm.

Our tips to get it right

  • Pick medium sized raw peeled shrimp, they cook at the same rate and won't dry out.
  • Pound the garlic and ginger instead of chopping them with a knife, the sauce binds better and flavors the whole pot.
  • Use a Dutch oven that closes tightly, the trapped steam is what cooks the shrimp without drying them out.

The variations

  • Swap the shrimp for thin strips of chicken breast, the cooking time in the Dutch oven stays the same.
  • For a vegetarian version, replace the shrimp with cubed firm tofu and the oyster sauce with extra soy sauce.
  • For kids, cut the black pepper in half and serve the shrimp already cut into smaller pieces.

What to serve it with

  • A bowl of steamed white rice
  • A clear lime soup
  • Hot unsweetened green tea

Storage

Baked glass noodles with shrimp keep for 2 days in the fridge in a sealed container. Reheat gently in a pan or in the microwave on low power so the shrimp don't turn tough. This dish doesn't freeze well, the glass noodles turn gummy once thawed.

Questions about this dish

Can you make the sauce ahead of time?

Yes, you can pound the garlic, ginger and pepper and mix them with the sauces the day before. Keep the sauce in the fridge and pour it over the noodles right before baking.

Can you use rice vermicelli instead of glass noodles?

Rice vermicelli works but absorbs the sauce less well and cooks faster. Watch it closely so it doesn't turn mushy.

Do the shrimp need to be peeled before cooking?

Yes, raw peeled shrimp cook more evenly in the steam inside the closed Dutch oven. Leaving the shell on would stop the sauce from coating them properly.

Why not mix the shrimp into the noodles before baking?

Placing the shrimp on top last lets them steam gently without sitting directly against the hot bottom of the pot. That keeps them tender instead of firm.
