Pad prik khing stands apart from saucier Thai curries. Here, the red curry paste cooks directly in the oil with ginger, which gives it a concentrated, almost dry flavor that coats the pork without drowning it. The green beans keep their crunch, the jasmine rice soaks up the juices, and kaffir lime leaves or lime zest add a fresh note at the end.

It's a weeknight dish that comes together in a single pan, perfect for an evening when you want something fragrant without spending hours cooking. Kids can enjoy it too if you cut back on the curry paste, and the green beans cut into short pieces are easy to eat with a fork. Mon Chou suggests it just as well for a Tuesday night as for a calmer Sunday.

The step by step recipe

  1. Cook the jasmine rice. 12 min

Rinse it first, it will be lighter.

  2. Trim the green beans, cut them into 3 cm pieces, and slice the pork thinly.

The thinner they are, the faster everything cooks.

  3. Fry the curry paste with grated ginger in the oil for 2 minutes. 2 min

Add a splash of water if it starts to stick.

  4. Add the pork, stir fry for 4 minutes, then add the green beans, fish sauce and sugar. 8 min

Keep the beans crisp, that's the whole point of this dish.

  5. Sprinkle with shredded kaffir lime leaves and serve over the rice.

Slice them into thin strips, they're tough otherwise.

Our tips to get it right

  • Slice the pork against the grain so it stays tender during the quick cooking.
  • Taste the sauce before serving and adjust the sugar or fish sauce since curry pastes vary a lot in strength from one brand to another.
  • Cook the green beans over high heat without a lid so they stay crisp instead of releasing their water.

The variations

  • Swap the pork for thinly sliced chicken or shrimp, adjusting the cooking time to 2 or 3 minutes for shrimp.
  • For a vegetarian version, use firm tofu cut into cubes and replace the fish sauce with soy sauce.
  • For kids, cut the curry paste down to 1 tablespoon and serve the rest on the side for adults who like it spicier.

What to serve it with

  • Jasmine or brown rice
  • Iced green tea
  • Crisp cucumber on the side

Storage

Keeps for 2 days in the fridge in a sealed container. It freezes well without the rice, for up to 2 months. Reheat in a hot pan so the green beans don't turn too soft.

Questions about this dish

You can slice the pork and cut the green beans the day before and store them separately in the fridge. The actual cooking should happen right before serving so the beans stay crisp.

What if I don't have kaffir lime leaves?

Finely grated lime zest gives a similar fresh note, add it right before serving as noted in the recipe.
