Mushroom and Comté Toasts with Green Salad
Mushroom and Comté toasts are thick slices of country bread topped with button mushrooms simmered in cream, then melted under the broiler with Comté cheese. For 4 people, it takes 35 minutes and is an easy recipe, at about €2.80 per serving. The key is cooking the mushrooms over high heat, in batches, so they brown instead of releasing too much water.

Under the melted Comté, button mushrooms turn soft in a cream sauce that clings without running, all piled onto a slice of toasted country bread that keeps some bite underneath. The shallot adds a gentle sharpness, and fresh parsley scattered on top right out of the oven wakes everything up. It is a dish that smells like forest and woodsmoke, simple but full of character.
This is the dinner for fall evenings when you want something warm without spending hours in the kitchen. Kids might be a bit wary of the mushrooms, but adults and older children love this generous dish, best served with a well dressed green salad to balance the richness of the cheese. Mon Chou brings it out as soon as the weather turns cold, perfect for a weeknight meal that feels a little different.

The step by step recipe
-
Clean and slice the mushrooms, chop the shallots.
Wipe the mushrooms with a damp cloth instead of washing them.
-
Sauté them in butter over high heat until the liquid evaporates. 10 min
Season with salt only at the end to keep their bite.
-
Add the shallot and cream, let it reduce for a few minutes. 4 min
The sauce should coat the back of a spoon, not run.
-
Toast the bread slices, top them with the creamy mushrooms, and cover with Comté.
Spread the topping all the way to the edges so the bread does not burn.
-
Run under the broiler until the cheese is golden, and serve with the dressed salad. 6 min
Scatter parsley on top as soon as it comes out of the oven.
Our tips to get it right
- Pick firm, white button mushrooms, they release less water and brown better in the pan.
- Toast the bread before topping it so it stays crisp even under the sauce and melted cheese.
- Grate the Comté yourself rather than buying it pre shredded, it melts better and tastes stronger.
The variations
- Swap the button mushrooms for a mix of wild mushrooms for a deeper, earthier flavor.
- For a richer version, top each toast with a poached egg before serving.
- To save time, make the mushroom filling the day before and only toast the bread at the last minute.
What to serve it with
- A well dressed green salad
- A glass of dry white wine
- A vegetable soup to start
Storage
Keep the mushroom and cream filling in a sealed container in the fridge for 2 days. Reheat it gently in a pan before piling it onto freshly toasted bread. Avoid freezing, the cream breaks down once thawed.
Questions about this dish
Can you make these mushroom toasts ahead of time?
Yes, make the creamy mushroom filling the day before and keep it in the fridge. All that is left to do is toast the bread and run everything under the broiler right before serving.
What cheese can replace Comté?
Gruyère or shredded Emmental both work well in place of Comté. Pick a cheese that melts nicely and has some character, so the dish does not taste bland.
Can you freeze the mushroom filling?
It is not recommended, since the cream tends to separate once thawed and loses its smooth texture. It is better to make a reasonable amount and eat it within two days.
How do you make this dish more kid friendly?
Chop the mushrooms very small so they blend into the cream and are less noticeable. You can also reduce the amount of mushrooms and add a bit more Comté to soften the flavor.
