Mu shu pork plays on contrast, the crunch of cabbage and carrot, the softness of scrambled eggs, and the tender bite of mushrooms, all coated in a sweet savory hoisin sauce. Everyone builds their own pancake at the table, choosing their own amount of filling and sauce, which makes this a dish you share as much as you eat.

It works for a weeknight when you want to break away from a plate and fork, but also for a Sunday evening when the whole family gathers to build pancakes together. Kids usually love filling and rolling their own, just go easy on the hoisin sauce for younger ones.

The step by step recipe

  1. Slice the pork into thin strips and toss it with the soy sauce.

Cut it into thin strips, it cooks in a flash.

  2. Cut the mushrooms, cabbage and carrot into thin strips.

A generous pile of shredded vegetables gives mu shu its crunch.

  3. Beat the eggs and cook them into a soft scramble in a little oil, then set aside. 3 min

Pull them off the heat slightly runny, they'll finish cooking in the mix.

  4. Stir fry the pork over high heat, then add the vegetables and cook until tender. 8 min

A hot pan and constant motion, the cabbage should stay crisp.

  5. Add the eggs back in with the hoisin sauce and sesame oil, toss together and serve with the pancakes and scallions for rolling. 3 min

Spread a little hoisin on the pancake before filling, that sauce makes the dish.

Our tips to get it right

  • Soak dried black mushrooms in hot water for 20 minutes before slicing, they double in size and lose their rubbery texture.
  • Cut all the vegetables into strips before you turn on the heat, the cooking goes fast and you won't have time to chop as you go.
  • If you don't have a wok, use the largest pan in the house and never fill it more than halfway so the vegetables stir fry instead of steaming.

The variations

  • Swap the pork loin for chicken or turkey strips, the cooking time stays the same.
  • For a vegetarian version, skip the pork and double the mushrooms, add some sliced smoked tofu for a heartier bite.
  • For kids in a hurry or who don't like rolling, serve the stir fry straight over white rice instead of in pancakes.

What to serve it with

  • A bowl of steamed white rice
  • A clear ginger soup to start
  • Hot green tea

Storage

Mu shu pork keeps for 2 days in the fridge in a sealed container, with the pancakes stored separately. Reheat the filling in a pan or microwave, and warm the pancakes separately over steam or under a damp towel. Freezing isn't recommended, the vegetables would lose their crunch.

Questions about this dish

Can you make mu shu pork ahead of time?

You can slice the vegetables and pork ahead and keep them in the fridge separately for a few hours. Cook the stir fry at the last minute, the vegetables lose their crunch if they sit around already cooked.

What can replace dried black mushrooms?

Sliced fresh button mushrooms work well and skip the soaking step. The flavor is a bit less earthy but the texture stays pleasant.

Can you use regular wraps instead of Chinese pancakes?

Yes, store bought wraps work fine and are easier to find. Warm them for a few seconds so they stay soft enough to roll.

How do you keep the pancakes from tearing when rolling?

Always warm them over steam or in the microwave under a damp towel right before serving. A cold or dry pancake almost always cracks when folded.
