Lasopy with bread

Lasopy is a Malagasy vegetable soup made with carrots, green beans, leeks and potatoes, served with bread. It takes 45 minutes for 4 people, it's very easy, and costs about €1.50 per person. The trick is to blend only part of the soup so it keeps some texture.

Tonight it's Malagasy soup, a thick lasopy with a good hunk of bread for dipping.

Lasopy is a thick vegetable soup, somewhere between a smooth puree and an old fashioned chunky soup you can almost eat with a fork. Carrots and potatoes give it body, green beans and leeks add freshness, and the result is hearty enough to feel like a real meal.

It's the kind of soup that warms you up without any fuss, perfect for a weeknight in fall or winter when everyone comes home cold. Kids tend to like it because it's not too thin, and at Mon Chou we love that it's made with simple vegetables you probably already have in the fridge.

The step by step recipe

  1. Peel the carrots and potatoes and cut them into cubes, then slice the leeks and green beans.

Cut everything roughly the same size so it all cooks at the same rate.

  2. In a large pot, sweat the onion and garlic in the oil without browning them. 4 min

A sweated onion adds flavor, a burnt one adds bitterness, keep the heat low.

  3. Add the vegetables, cover with a liter and a half of water, season with salt and simmer gently. 30 min

Poke a potato with the tip of a knife, it should give way without resistance.

  4. Blend about half of the soup and stir it back into the pot with the rest.

Set aside a bit of the cooking liquid before blending so you can adjust the thickness to taste.

  5. Adjust the seasoning, add pepper and serve hot with sliced bread.

A drizzle of raw olive oil right before serving brings the whole soup to life.

Our tips to get it right

  • Cut the vegetables into even pieces from the start, that way the potatoes won't turn to mush while the green beans are still firm.
  • Taste for salt before blending, once the soup thickens it's harder to adjust the seasoning evenly.
  • If the soup looks too thick after blending, thin it with a bit of hot water rather than cold, so you don't shock the texture.

The variations

  • Swap the green beans for zucchini in summer, the soup keeps the same texture with a milder taste.
  • Add a vegetable bouillon cube for a more savory version, it won't change the character of the recipe.
  • For kids who don't like chunks, blend the whole soup instead of just half.

What to serve it with

  • Warm baguette or crusty bread
  • Grated cheese on top
  • A simple green salad afterward

Storage

Lasopy keeps for 2 to 3 days in the fridge in a sealed container. It freezes well for up to 2 months, ideally before adding the bread. Reheat gently over low heat, stirring and adding a little water if it has thickened.
