Chicken and veggie bokit
Bokit is a Guadeloupean fried bread stuffed with grilled chicken, fresh veggies, and a mayo ketchup sauce, for 4 people in 1 hour, medium difficulty, for €2.60 per person. The trick is frying in oil that's really hot, so the bread puffs up instantly instead of soaking up grease.

Bokit starts with dough that puffs up the moment it hits hot oil, turning crisp outside and soft inside. You split it open like a sandwich and stuff it warm, the grilled chicken brings the savory base, while the crunchy veggies and mayo ketchup sauce add freshness and a little tang that balances everything out.
It's the kind of dish that breaks up the usual dinner rotation without adding real hassle, great for a weeknight when you have a bit of time, or for guests who like assembling their own food. Kids love building their own bokit however they want, and Mon Chou designed this recipe to stay simple despite the frying step.

The step by step recipe
-
Mix the flour, yeast, salt, and warm milk with a little water, knead, then let rise under a towel. 45 min
Set the bowl near a warm spot, the dough rises twice as fast.
-
Meanwhile, sear the chicken strips in a pan with salt and pepper. 8 min
Don't stir, let it brown on one side before flipping.
-
Divide the dough into four, roll each ball into a round, then drop it into the hot oil. 8 min
Lower the dough in gently, it will puff up and float, flip it as soon as it's golden.
-
Drain the breads on paper towels and split them open like a sandwich.
Open them while still hot, the inside stays soft.
-
Fill with chicken, sliced tomatoes, sliced red onion, lettuce leaves, and a sauce of mixed mayonnaise and ketchup.
Serve the bokit right away, the bread turns less crispy as it cools.
Our tips to get it right
- Knead the dough for at least 5 minutes until it turns elastic, that's what gives the bokit its stretchy crumb once fried.
- Test the oil temperature by dropping in a small piece of dough, if it sizzles up right away, the oil is ready.
- Slice the chicken into thin, even strips so it cooks fast and tucks easily into the open bread.
The variations
- Swap the chicken for ground beef patties or breaded fish to change up the filling from one week to the next.
- For a vegetarian version, fill the bokit with spiced red beans and mashed avocado instead of chicken.
- To save time, buy ready made flatbreads and simply stuff them warm, kids can handle the assembly themselves.
What to serve it with
- A chilled passion fruit juice
- A side of cucumber salad
- A lime based virgin punch
Storage
Raw dough keeps for a day in the fridge wrapped in plastic, it will rise a bit less but still works fine. A filled bokit is best eaten right away, since the fried bread loses its crispness as it cools. You can however keep the cooked chicken for 2 days in the fridge and reheat it in a pan before stuffing fresh bread.
Questions about this dish
Can you make the bokit dough ahead of time?
Yes, you can make it the day before and keep it wrapped in the fridge. Take it out a few hours ahead so it warms up and rises a little before shaping and frying.
Can bokit be baked instead of fried?
Traditional bokit is fried, which gives it that puffy, light texture. Baking it in the oven produces a result closer to a plain flatbread, less true to the original recipe.
What oil works best for frying bokit?
A neutral oil that handles high heat well, like sunflower or peanut oil, works great. Skip olive oil, since it heats less evenly and changes the taste of the bread.
How do you make bokit kid friendly?
Let kids pick their own filling and add the sauce themselves, they love building their own bokit. You can also cut the chicken and veggies smaller to make handling easier.
How long does it take to make a chicken bokit with fresh veggies and sauce?
Count 1 h in total, prep and cooking included. The recipe is rated “medium”.
