Goat cheese and honey croque monsieur with salad

A goat cheese and honey croque monsieur is a grilled sandwich filled with melting goat cheese, honey and walnuts, served with a green salad. It serves 4, takes 25 minutes, is very easy to make and costs about €2.40 per person. The trick is drizzling the honey over the cheese before closing it, so it caramelizes lightly in the oven.

This croque is a nice change from the classic ham and Swiss version. The goat cheese turns creamy in the oven's heat, the honey caramelizes slightly at the edges and the walnuts add a crunch that cuts through the soft bread. The result is both sweet and salty, with a faint caramel note running through the whole filling.

It's a weeknight recipe, meatless, that also works well when friends show up unannounced. With the green salad on the side, dinner comes together as one simple plate, no complicated shopping list and barely any dishes to wash.

The step by step recipe

  1. Preheat the oven to 200°C. Cut the goat cheese into rounds and chop the walnuts.

Cut the goat cheese with a piece of thread, it won't get squashed.

  2. Top four slices of bread with Swiss cheese, goat cheese rounds, a drizzle of honey and walnuts.

Leave a small border without filling so the cheese doesn't spill over.

  3. Close with the remaining slices and butter the tops.

Spread the butter very lightly with a spatula.

  4. Bake until the croque is golden and melty. 12 min

Flip halfway through if you want both sides crispy.

  5. Dress the salad and serve it alongside the warm croques.

A drizzle of honey on the salad echoes the one in the croque.

Our tips to get it right

  • Pick a creamy goat cheese log, it melts more evenly than a drier one that just softens without really flowing.
  • Don't overload the center of the bread, or the melted cheese will drip onto the baking sheet while it cooks.
  • If your oven isn't hot enough to brown things quickly, finish with a minute under the broiler to crisp the top without drying out the inside.

The variations

  • Swap the walnuts for chopped hazelnuts or sunflower seeds for a different crunch.
  • Add a few thin slices of pear or apple to the filling, they pair really well with goat cheese and honey.
  • For kids who aren't fans of goat cheese, keep just the Swiss cheese and honey, the croque stays satisfying.

What to serve it with

  • Green salad with a honey drizzle
  • Vegetable soup as a starter
  • A glass of fresh apple juice

Storage

This croque is best eaten right out of the oven, while the cheese is still melty. If you have leftovers, store them in a sealed container in the fridge for 1 day and reheat in the oven for a few minutes to bring back the crunch. It doesn't freeze well because of the goat cheese and salad.

Questions about this dish

What bread works best for this goat cheese croque monsieur?

Classic sandwich bread works great because it toasts evenly and stays soft inside. You can also use whole wheat sandwich bread or sliced country bread for more character.

Can you prepare these croques ahead of time?

You can assemble the sandwiches a few hours ahead and keep them covered in the fridge until you're ready to bake. Avoid baking them too early, since they lose their crunch as they cool.

Can you replace the Swiss cheese with something else?

Yes, Comté or Edam both work well and melt just as nicely. The key is choosing a cheese that melts smoothly to bind the filling with the goat cheese.

How do you keep the honey from running everywhere during baking?

Pour the honey directly onto the goat cheese rather than the bread, it stays in place better that way. Also leave a small border of bread without filling to limit spills.
