Fried eggs with sautéed potatoes

Fried eggs with sautéed potatoes is a complete meal for 4 people, ready in 35 minutes, very easy to make, for about €1.50 per serving. The trick is to parboil the potatoes in water before sautéing them, so they stay tender inside while turning crisp in the pan. The eggs cook over medium heat and go on top, still runny.

A classic weeknight dinner with zero fuss, runny fried eggs over golden potatoes with garlic and parsley.

This is the kind of dish you make without overthinking it, and everyone still ends up happy. The potatoes turn golden outside, soft inside, and get a quick hit of garlic and parsley at the very end so it doesn't burn. The eggs on top bring that runny yolk that coats everything the moment you cut into it.

It's the ideal weeknight dinner when you have neither the time nor the energy to fuss, but it's also a dish kids genuinely ask for. A simple green salad on the side is all you need to round out the plate. Mon Chou likes it just as much on a quiet Sunday evening, simple and comforting after a busy week.

The step by step recipe

  1. Peel the potatoes, cut them into cubes, and cook them in salted water. 10 min

Start them in cold water and stop cooking as soon as a knife tip slides in easily.

  2. Drain them and let them sit in the colander for five minutes to dry out.

Well dried potatoes brown much better.

  3. Sauté them in a large skillet with three tablespoons of oil over fairly high heat, until golden. 12 min

Don't stir too much, let them color on one side before flipping.

  4. Add the chopped garlic and chopped parsley near the end of cooking, then season with salt and pepper.

Garlic burns fast, add it only in the last two minutes.

  5. Crack the eggs into an oiled skillet and cook over medium heat, then place them over the potatoes with the dressed salad. 4 min

Cover the pan for a minute so the white sets without the yolk hardening.

Our tips to get it right

  • Use a wide skillet so the potato cubes aren't crowded, otherwise they'll steam instead of turning golden.
  • Crack each egg into a small cup before sliding it into the pan, it's easier to keep the yolk whole.
  • If you like your eggs really runny, pull them off the heat as soon as the white is just set around the yolk, residual heat finishes the job.

The variations

  • Swap the parsley for chives or oregano to change up the flavor of the potatoes.
  • Add sautéed mushrooms or spinach to the potatoes for a heartier, slightly greener version.
  • For kids in a hurry, cut the potatoes smaller so they cook faster, and scramble the eggs instead of frying them.
  • Swap the green salad for cherry tomatoes or whatever seasonal raw veggies you have on hand.

What to serve it with

  • A simple green salad
  • Grilled country bread
  • Sparkling water with lemon

Storage

The sautéed potatoes keep for 2 days in the fridge in a sealed container and reheat well in a skillet. The fried eggs are best eaten right away, they don't freeze and lose their runny texture when reheated.

Questions about this dish

Which type of potato works best?

Use a firm, waxy potato, it holds its shape when cubed and browns better in the pan. Starchy potatoes fall apart more easily and turn out less crisp.

Can you prep the potatoes ahead of time?

Yes, you can parboil them a few hours ahead and keep them in the fridge. Just sauté them in the pan right before serving, they'll still crisp up perfectly.

How do you get a perfectly runny fried egg?

Cook the eggs over medium heat rather than high, so the white sets without rushing the yolk. Covering the pan for a minute helps set the top of the white without hardening the yolk.

Can you use scrambled eggs instead of fried?

Yes, that's a great option for kids who aren't fans of runny yolks. Just beat the eggs before pouring them into the pan and stir while they cook.

How long does it take to make fried eggs over sautéed potatoes, with a side salad?

Count 35 min in total, prep and cooking included. The recipe is rated “very easy”.
