Dibi, Senegalese grilled lamb with onions and fries

Dibi is a Senegalese dish of grilled lamb chops served with mustard onions and homemade fries, inspired by Dakar's street grills. For 4 people, it takes 45 minutes, is rated easy, and costs €5.20 per person. The key is a garlic and chili rub on the lamb and a double fry for truly crisp fries.

Dibi is built on grilled lamb chops, lightly seasoned with garlic and chili, paired with soft onions sharpened by mustard and lemon. The meat stays juicy, the onions bring a little kick that wakes up the whole plate, and homemade fries soak up those flavorful juices. It's a dish meant to be eaten with your hands, no fuss involved.

This is the kind of dinner that breaks up the week without needing any special equipment, just a hot skillet or a grill. Kids go for the grilled meat and the fries, while adults enjoy the chili edge and the mustard onions. Mon Chou turned it into a simple recipe for a spring or summer evening, whether it's a weeknight or a relaxed dinner with friends.

The step by step recipe

  1. Rub the chops with crushed garlic, chili, salt and pepper, then let them marinate. 20 min

Take the meat out of the fridge half an hour before cooking for even texture.

  2. Cut the potatoes into sticks, rinse and dry them, then fry them in oil in two batches. 15 min

A first fry at 160°C, then a second at 180°C, that's the secret to crispy fries.

  3. Slice the onions, cook them gently in a skillet, then mix them with the mustard and lemon juice. 10 min

Add a spoonful of water for a smooth, not dry, sauce.

  4. Grill the chops in a very hot skillet or on the barbecue, a few minutes on each side. 8 min

Let them rest for two minutes before serving so the juices settle.

  5. Serve the chops topped with onions alongside the fries and the salad.

Cut the meat into pieces Senegalese style and eat with your hands.

Our tips to get it right

  • Pick chops of similar thickness so they all cook at the same pace.
  • Don't crowd the skillet or grill, leave space between the chops so they sear instead of steaming.
  • Drain the potatoes well on paper towels between the two fry batches for crispier fries.

The variations

  • Swap the lamb for chicken pieces, the garlic and chili rub works just as well.
  • For a vegetarian version, grill eggplant slices or halloumi instead of the chops and keep the onions and fries.
  • For kids, cut back on the chili and serve the onions on the side so everyone can adjust to taste.

What to serve it with

  • Lemony green salad
  • Flatbread or baguette
  • Mint tea or hibiscus juice

Storage

The meat and onions keep for 2 days in the fridge in a sealed container. Fries lose their crunch once chilled, so it's best to eat them the same day. Reheat the meat gently in a skillet so it doesn't dry out.

Questions about this dish

Can you prepare the marinade ahead of time?

Yes, you can rub the chops with garlic, chili, salt and pepper the night before and let them marinate covered in the fridge. Take them out half an hour before cooking so they cook evenly.

Can you use a different cut instead of lamb chops?

Lamb rib cutlets or leg of lamb cut into pieces work just as well, as long as the meat stays thin enough to grill quickly. Just adjust the cooking time to the thickness of the pieces.

Can the fries be baked instead of fried?

Yes, cut the potatoes into sticks, toss them with a little oil and bake in a hot oven, flipping halfway through. They won't be as crisp as fried ones but they're still good.

Is this dish too spicy for kids?

The amount of chili is moderate and mostly flavors the crust of the meat. You can cut it in half for kids and serve the mustard onions on the side.
