This comté and walnut tart is a savory tart for 4 people, ready in 50 minutes, easy to make, for about €2.20 per person. Its success comes from using comté aged twelve months and roughly chopped walnuts that stay crunchy under the golden crust. Served warm with a green salad, it makes a complete meatless dinner.

This tart plays on contrast, a crisp pastry base, a creamy egg and cream filling, and walnuts that add crunch to every bite. The grated comté melts into the filling, then forms a golden crust on top, with a touch of nutmeg that quietly lifts the flavor without ever overpowering the cheese.

This is the tart for weeknights when you want a warm meatless meal ready in under an hour with minimal cleanup. Mon Chou likes it for simple family dinners, paired with a green salad that brings freshness against the richness of the comté. It also works well on a Sunday evening, served warm straight from the oven.

The step by step recipe

  1. Preheat the oven to 180°C. Roll out the pastry into a tart pan and prick it with a fork.

Blind baking the crust for ten minutes keeps it crispier.

  2. Beat the eggs with the cream, milk, nutmeg, salt and pepper.

Go easy on the salt, the comté already brings plenty.

  3. Spread half the comté and the chopped walnuts over the tart base.

    Chop the walnuts coarsely.

  4. Pour in the egg mixture, scatter the rest of the comté on top, then bake. 35 min

The comté on top forms a nice crust.

  5. Let it cool for five minutes and serve with the dressed salad. 5 min

Resting makes it easier to slice.

Our tips to get it right

  • Grate the comté yourself rather than buying pre shredded cheese, it melts better and tastes stronger.
  • If the crust puffs up while baking, prick it more with a fork before pouring in the filling.
  • Let the filling rest a few minutes before pouring it in, the air bubbles settle and the tart bakes more evenly.

The variations

  • Swap the comté for emmental or gruyère if that's what you have, the flavor stays close to the original.
  • Add pan fried bacon bits on the crust before the filling for a richer, non vegetarian version.
  • For kids, replace the walnuts with small pieces of ham and cut the nutmeg in half.

What to serve it with

  • Green salad with vinaigrette
  • Pumpkin soup as a starter
  • A glass of apple juice

Storage

The tart keeps for 2 to 3 days in the fridge in a sealed container. It can be frozen once baked and cooled, then reheated straight from frozen in the oven. Reheat it in a low oven, around 150°C, so it doesn't dry out.

Questions about this dish

Can you make this tart ahead of time?

Yes, you can bake it the day before and reheat it gently in the oven. You can also mix the filling in advance and pour it in right before baking.

Can you use a different nut instead of walnuts?

Hazelnuts or sliced almonds work well in place of walnuts. Chop them roughly so the tart keeps some crunch.

Do you need to blind bake the crust?

It's not required but it helps if you like a crisp base. Ten minutes blind baking at 180°C before adding the filling is enough.

Can you use puff pastry instead of shortcrust?

Yes, puff pastry works too but gives a lighter, less crisp base. Shortcrust remains the classic choice for this tart.
