Chicken fondue with potatoes
Chicken fondue is a fun shared meal made of breaded chicken cubes that you fry yourself in a pot of hot oil at the table, served with potatoes and three dipping sauces. It takes 45 minutes for 4 people, counts as medium difficulty because of the breading, and costs €3.60 per serving. The key to success is keeping the oil at a steady temperature, neither too hot nor too lukewarm.

Chicken fondue is the savory, playful cousin of classic cheese fondue, the kind of meal where everyone spears their own breaded chicken cube and dunks it into bubbling oil before dipping it into their sauce of choice. The chicken stays juicy inside while the breadcrumb coating turns golden and crackly, a contrast kids love achieving themselves with their fondue fork.
It's a great meal for a slow winter Sunday night, or for having friends over without spending the whole evening in the kitchen since everyone cooks their own food at the table. The potatoes make it filling, and the three sauces, mayonnaise, mustard and ketchup, let everyone build their own plate, which makes this an easy dish to adapt for the whole family.

Heat the oil in a fondue pot and fry the cubes a few minutes at a time using fondue forks. 15 min
Don't fry too many cubes at once or the oil will cool down.
Our tips to get it right
- Take the breaded cubes out of the fridge 15 minutes before sitting down, they fry better when they're not ice cold.
- Always bread a few extra cubes, some fall into the oil or slip off the fondue fork.
- Set the fondue pot on a stable burner in the center of the table, away from little hands that could tip it over.
The variations
- Swap the chicken for turkey or classic chicken breast, the result is just as crispy.
- For a vegetarian version, use firm cheese cubes breaded the same way, they soften slightly when fried.
- For kids, bread a few extra potato cubes alongside the chicken, they love spearing and frying those themselves.
What to serve it with
- A tangy green salad
- A glass of dry white wine
- Pickles and small onions
Storage
Keep raw breaded cubes in a sealed container in the fridge for up to 24 hours before frying. Cooked leftovers keep for 2 days in the fridge but lose their crunch, reheat them in the oven rather than the microwave.
Questions about this dish
Can you bread the chicken cubes ahead of time?
Yes, you can bread them the night before and keep them covered in the fridge. Take them out 15 minutes before frying so they don't cool the oil down too much.
What oil works best for chicken fondue?
Sunflower oil is a good choice since it handles heat well without adding much flavor. Avoid olive oil, which starts smoking sooner at high temperatures.
Can you use a different coating instead of regular breadcrumbs?
Panko breadcrumbs give an even crispier result. Ground rolled oats also work in a pinch.
How do you know the oil is hot enough?
Drop in a small piece of bread, if it turns golden in under a minute the oil is ready. A kitchen thermometer is the most reliable way to hit 180°C.
