Parisian salad brings together soft potatoes, crunchy raw mushrooms and creamy hard boiled eggs in one bowl. Ham and Gruyère make it filling enough to count as a full meal, so you don't need to cook anything else alongside it. This is a composed salad in the true sense, built as a main course rather than a starter.

It's the kind of salad you make on a mild weeknight, or pack up ready to go for a picnic. Kids can spot every ingredient and pick out their favorites, with the ham and eggs usually winning them over fast. It also works well for a summer lunch on the patio, with nothing to turn on in the oven.

The step by step recipe

  1. Cook the potatoes whole in salted water, then peel them and slice them into rounds. 20 min

Poke them with the tip of a knife, it should go in without resistance.

  2. Meanwhile, boil the eggs, then cool them in cold water and peel them. 10 min

A quick rinse in cold water stops the cooking and prevents a greenish ring around the yolk.

  3. Make the dressing by whisking together the mustard, vinegar, oil, salt and pepper.

Start with the mustard and vinegar, the oil blends in much more easily after that.

  4. Clean the mushrooms and slice them thin, cut the ham into strips and the Gruyère into cubes.

Wipe the mushrooms with a damp cloth instead of rinsing them, they stay firmer that way.

  5. Combine everything in a large bowl with the lettuce, potatoes and eggs cut into wedges, then drizzle with the dressing.

Add the eggs last and toss gently so they don't crumble.

Our tips to get it right

  • Pick a waxy, firm fleshed potato variety, they hold their shape in slices instead of turning mushy in the salad.
  • Cut the ham and Gruyère into similarly sized pieces, so every bite gets a bit of everything.
  • If you're making the salad ahead, keep the eggs separate and add them right before serving so they stay neatly shaped.

The variations

  • Swap the ham for smoked ham or crispy bacon bits for a stronger flavor.
  • For a vegetarian version, skip the ham and double the mushrooms, sautéing them briefly in a pan first.
  • For picky kids, cut everything into small cubes and serve the dressing on the side, so they can build their own bowl.

What to serve it with

  • Crusty country bread
  • A cold sparkling water
  • Plain yogurt for dessert

Storage

The salad keeps for 2 days in the fridge in a sealed container. It doesn't freeze well, since the potatoes and hard boiled eggs lose their texture. Let it sit out for 10 minutes before serving so it's not too cold.
