Barbecue pork ribs are about meat that pulls right off the bone, under a sticky, slightly caramelized crust you end up licking off your fingers. The homemade sauce, built on ketchup, smoked paprika and cider vinegar, brings that sweet, tangy, smoky mix that defines this kind of dish. Oven baked potatoes, cooked skin on, soak up the juices dripping from the ribs during the last half hour.

This is the right dish for a relaxed Sunday, when the oven does the work while you handle other things for a couple of hours. Kids love eating with their hands, and the sticky sauce always gets a good reaction at the table, even on a weeknight if you start cooking early. Mon Chou just gives you a heads up, you need some time ahead, but no tricky technique.

The step by step recipe

  1. Mix the ketchup, sugar, vinegar, Worcestershire sauce, smoked paprika and garlic powder to make the barbecue sauce.

Heat the sauce for five minutes, it thickens and the flavors come together.

  2. Brush the ribs with sauce, wrap them in foil and bake at 150°C. 2 h

Remove the thin membrane on the back of the ribs, they'll be more tender.

  3. Wash the potatoes, cut them into quarters and toss them with oil, salt and pepper.

Keep the skin on, it turns crispy and adds flavor.

  4. Spread the potatoes on a baking sheet and bake them alongside the ribs for the last half hour. 30 min

Flip them halfway through for even browning.

  5. Uncover the ribs, brush them with sauce and let them caramelize at 220°C. 10 min

Watch closely, the sugar in the sauce burns fast.

Our tips to get it right

  • Pick meaty ribs that aren't too fatty, ask your butcher to remove the membrane if you'd rather not do it yourself.
  • Don't skip the covered, low temperature cooking stage, it's what makes the meat fall apart tender before the final glaze.
  • If the sauce looks too thin after cooking, simmer it two more minutes over low heat, it should coat the back of a spoon.

The variations

  • Swap the brown sugar for honey for a rounder, slightly stickier sauce.
  • For a vegetarian version, brush the same sauce over thick cauliflower steaks and roast them alongside the potatoes.
  • For kids, cut the ribs into individual portions before cooking, they're easier to eat and cook a bit faster.

What to serve it with

  • Crunchy coleslaw
  • Grilled corn on the cob
  • Cold homemade lemonade

Storage

Ribs keep for 3 days in the fridge in a sealed container. They freeze well once cooked, laid flat in an airtight bag. Reheat covered in foil so they don't dry out, then uncover for the last two minutes.

Questions about this dish

Can you cook pork ribs without foil?

Foil creates a steaming effect that tenderizes the meat without drying it out. Without it, use a covered dish or parchment paper plus heat resistant cooking film.

Can you make the barbecue sauce ahead of time?

Yes, it keeps for 4 to 5 days in the fridge in a sealed jar. You can even double the batch to always have some on hand.

What can replace Worcestershire sauce?

A teaspoon of soy sauce with a few drops of balsamic vinegar gives a similar result. The flavor will be slightly less complex but the dish still works.

Why remove the membrane on the back of the ribs?

This thin white skin keeps the sauce from soaking in and turns rubbery when cooked. Slide a pointed knife under it and it peels off in one piece.
