Argentine Swiss chard pie with green salad

Argentine Swiss chard pie is a double crust pie filled with chard, cheese, and hard boiled eggs, a classic from Buenos Aires. For 4 people, it takes 70 minutes and a medium skill level, at a cost of €2.00 per person. The key to getting it right is pressing the cooked chard dry so the filling doesn't turn watery.

Under its golden crust, this pie hides a rich filling where shredded cheese and cream cheese coat the chard, and rounds of hard boiled egg add softness to every slice. It's a hearty double crust pie, not a simple quiche, and you can tell from the first bite, denser and more filling.

This is a dish for a relaxed Sunday or a weeknight when you have a bit of time to spare, since you need to cook the chard, hard boil the eggs, then assemble before baking. Kids tend to like it because the cheese softens the taste of the chard, and it holds up well at room temperature for a packed lunch or a picnic.

The step by step recipe

  1. Wash the chard, remove the stalks if they're tough, chop it, then cook it in boiling salted water. 8 min

The stalks take longer to cook, add them to the water a few minutes before the leaves.

  2. Hard boil three eggs in boiling water, then peel and slice them into rounds. 10 min

Drop them into cold water right after, the shell comes off more easily.

  3. Drain and press the chard, then sauté it with the sliced onions in the oil. 10 min

Press it firmly in a kitchen towel, it should come out almost dry.

  4. Mix the chard with two beaten eggs, the shredded cheese, the cream cheese, nutmeg, salt, and pepper.

Taste the raw filling, it's what determines the flavor of the pie.

  5. Line a pie dish with dough, spread the filling and the hard boiled eggs over it, cover with the second sheet of dough, brush with beaten egg, and bake at 190°C. 35 min

Poke the top with a fork so steam can escape.

Our tips to get it right

  • Pick chard with wide white stalks, they release less water than thin stemmed varieties once cooked.
  • Let the filling cool slightly before adding the beaten eggs, otherwise they start to cook on contact and the texture turns grainy.
  • Prick the bottom crust with a fork before filling it, this keeps it from puffing up and the filling from spilling over during baking.

The variations

  • Swap the cream cheese for ricotta, the filling will be a bit firmer and less creamy.
  • Replace part of the chard with spinach for a milder flavor, especially good for kids.
  • For a quicker version, use a single bottom crust with no top, and cut the baking time by ten minutes.

What to serve it with

  • Green salad with vinaigrette
  • Sliced tomatoes
  • A glass of grape juice

Storage

The pie keeps for 2 to 3 days in the fridge in a sealed container. It freezes well once baked and cooled, sliced into portions. Reheat in the oven rather than the microwave to keep the crust crisp.
