Tender potatoes, smoked sausage lightly crisped in the pan and a good mustardy vinaigrette make a simple but effective trio. Pickles and red onion add the crunch and tang that wake everything up, while fresh parsley keeps it from feeling heavy. This is a generous salad, far from a light side dish, built to actually fill you up.

It's the ideal weeknight dinner when you don't want to think too hard, just one pot and one pan. Kids tend to like it because smoked sausage tastes familiar and warm potatoes are always an easy sell. Mon Chou suggests it for those evenings when you need something warm, comforting and on the table in half an hour.

The step by step recipe

  1. Cook the potatoes in their skins in salted water, starting from cold water. 20 min

Poke them with the tip of a knife, they're ready when it slides in easily.

  2. Heat the sausages in a pan, then slice them into rounds and brown them without adding any fat. 8 min

Smoked sausages are already cooked, you just need to color them to release their flavor.

  3. Make the vinaigrette with the mustard, vinegar, oil, salt and pepper.

Start with the mustard and vinegar, the oil blends in much more easily after that.

  4. Peel the warm potatoes, cut them into rounds and toss them with the vinaigrette, sliced red onion and pickles.

Hold them in a clean kitchen towel to peel if they're too hot to handle.

  5. Arrange the salad on plates, add the warm sausage and the chopped parsley.

Serve the dish warm, the hot sausage brings out the tang of the vinaigrette.

Our tips to get it right

  • Pick waxy potatoes, they hold their shape in rounds and won't turn mushy once coated in vinaigrette.
  • Cut the potatoes and onion to roughly the same size, so every bite balances the tender and the crunchy.
  • Taste the vinaigrette before pouring it over the potatoes, you can still adjust the vinegar or mustard before it gets absorbed.

The variations

  • Swap the smoked sausage for smoked bacon lardons browned in the pan for a heartier, more rustic version.
  • For a vegetarian version, replace the sausage with diced smoked tofu or pan seared mushrooms.
  • For kids or smaller appetites, serve the warm potatoes and sausage without vinegar, just a drizzle of oil and a touch of mild mustard.

What to serve it with

  • A crisp green side salad
  • Toasted country bread
  • Cold sparkling water

Storage

This salad keeps for 2 days in the fridge in a sealed container. It doesn't freeze well because of the cooked potatoes. Reheat it gently in a pan or eat it cold the next day, it still tastes good.

Questions about this dish

Can you make this salad ahead of time?

Yes, you can cook the potatoes and make the vinaigrette a few hours ahead. Toss everything together at the last minute and just reheat the sausage so the dish stays warm and the vegetables stay crisp.

What smoked sausage works best?

Smoked kielbasa, andouille or any fully cooked smoked sausage works well here. It's already cooked, so you only need to brown it to bring out its smoky flavor.

Can you use lemon instead of vinegar?

Yes, a squeeze of lemon juice works well in place of vinegar in the vinaigrette. It gives a slightly fresher, less sharp result, so adjust to taste.

Should you peel the potatoes before or after cooking?

Always after cooking, while they're still warm. The skin slips off easily then, and the flesh stays firm enough to cut into neat rounds.

Count 30 min in total, prep and cooking included. The recipe is rated “very easy”.
