Warm goat cheese salad is a composed salad topped with honey baked goat cheese toasts on country bread, served with tomatoes and walnuts. For 4 people, it takes 25 minutes, it's very easy, and costs about €2.40 per person. The key is serving the toasts straight from the oven, still warm, on top of the salad.

This is the classic bistro salad, the one you order thinking you'll eat light and end up finding filling. The goat cheese softens under the broiler, the honey caramelizes slightly at the edges, and the contrast with the crisp fresh salad is what makes it work. The walnuts add a different kind of crunch, the tomatoes bring juiciness and a touch of acidity.

It's the kind of dish that saves a weeknight without feeling like you're settling for less, and it also makes a great starter for a dinner with friends. Kids usually like melted cheese and toasted bread, you can just set the honey aside if some prefer it plain. Mon Chou often adds it to the week when the fridge needs clearing of leftover salad and cheese.

The step by step recipe

  1. Preheat the oven to 200°C and wash the salad, then spin it dry.

A well dried salad takes the dressing better.

  2. Cut the goat cheese into eight rounds, place them on the bread slices, drizzle with honey and sprinkle with thyme.

Cold goat cheese slices more cleanly.

  3. Bake the toasts until the cheese is golden and bubbling. 8 min

Pop them under the broiler for two minutes for a nice color.

  4. Make the vinaigrette with the mustard, vinegar, oil, salt and pepper.

Whisk the mustard into the vinegar well before adding the oil.

  5. Arrange the salad, tomato wedges and walnuts on plates, season, then top with the warm toasts.

Add the toasts last, the heat makes the salad wilt slightly, that's part of the charm.

Our tips to get it right

  • Choose a firm goat cheese log rather than a very creamy fresh one, it holds up better under heat and slices more cleanly.
  • Make the vinaigrette while the toasts are in the oven, you save time and everything arrives warm at once.
  • If you don't have a broiler, leave the toasts a bit longer in the oven at 200°C, the result is still good even without a perfectly golden top.

The variations

  • Swap the walnuts for hazelnuts or toasted pine nuts for a different crunch.
  • Add pan fried bacon bits to the salad for a heartier, non vegetarian version.
  • For kids, skip the thyme on the toasts and cut the tomatoes into small cubes instead of wedges.

What to serve it with

  • A glass of dry white wine
  • A chilled soup starter
  • Sparkling water with lemon

Storage

This composed salad doesn't keep well once assembled, but you can store the raw toasts in the fridge for a day before baking. Once dressed and assembled, eat the salad within the hour, the leaves wilt quickly. Already baked toasts don't reheat well, they turn rubbery.

Questions about this dish

What kind of bread works best for the toasts?

A slightly stale country loaf holds the topping better and toasts without going soft. A regular baguette works too if you don't have country bread on hand.

Can you prepare the toasts ahead of time?

You can top the bread with goat cheese several hours ahead and keep it covered in the fridge. Bake the toasts only right before serving so they stay warm and melty.

Can you use a different cheese instead of the goat cheese log?

A small round goat cheese cut in half works well and gives a sharper flavor. Fresh goat cheese is possible too, but it spreads more when heated, so use a thinner layer.

How do you keep the salad from wilting under the warm toasts?

Dress the salad right before adding the toasts, not earlier, so it keeps some crunch. Place the toasts at the very last moment, it's normal for the leaves right under them to wilt slightly.
